TONIGHT`S DINNER

Tonight we had Chicken Kiev with Lyonnaise potatoes. I have to admit the CK was not made by me but a local butcher whose ready meals are really, really good but I did make the Lyonnaise potatoes myself and I know I shouldn`t blow my own trumpet but it was a good meal

Mine sounds plain and boring compared... anyway we love lambs liver and bacon with onions in gravy, with mash and green beans..
I'll be bad and have some Tesco mint choc chip ice cream and OH will have half a packet of ginger nuts with his cup of tea half way through the evening . grin

Ours will be monkfish in sherry and saffron with pinenuts and raisins, brown rice and an avocado salad.
We are redoing our kitchen floor so I need something quick and easy.

Roasted parsnips from the allotment, roasted squash with spiced puy lentils.Mamie your monkfish recipe sounds lovely!

For as long as I can remember I've been trying to make courgettes and tomatoes into a meal that doesn't taste the same as we had the night before. Now we are down to our last few tomatoes and three courgettes I decided I just couldn't face them one more time and so tonight we had a wonderful lasagne made with leeks, onions and garlic from the allotment and delicious puy lentils. Delicious. smile

Courgette fritters. Grate courgettes, add salt and pepper and enough flour to make into a paste. (do not drain) Put an inch of oil in the bottom of a pan, add a tbsp. of mixture to very hot fat, turn when brown underneath. Absolutely delicious. Save on kitchen paper on a plate until all mixture is cooked. You can do about three at a time. It's what I do when I get sick of ratatouille. Use a dip or sauce if liked, it goes with anything.

Courgettes sliced and cut into half moons. Gently sauté sliced garlic, add courgette and some red chilli. Saute on high for about 3 mins, add chopped basil, lots of ground pepper, toss into pasta and top with Parmesan. Lovely and super quick.

Tuna and prawn pasta. Sautéed onions and garlic and sliced mushrooms with a tin of tuna and some king prawns, fines herbs, a glass of white wine and a carton of cream to create the sauce. No pudding tonight, pasta is very filling.

Tonight it will be eggy sandwiches followed by a home grown apple eaten at the airport while I wait to go on my hols. And this is to be a 'proper' holiday not a 'visit the family and do lots of jobs' holiday. YIPEE !!

Have a great holiday Tiggypiro we too visit my son and family near Brighton and friends say 'have a lovely time' when in reality we help with the children, DH does some DIY and by the time we leave we are very tired and can't wait to get home.

We are having chicken fajitas with dips from Sainsbury's .

Tonight, we are having fillet steak with a brandy, mushroom and cream sauce (from an old Dairy Diary!!) with tenderstem and sauted potatoes. It's DH's favourite!!

It's our anniversary and we had planned to go out but, as I was ill yesterday, we thought discretion was the better part of valour.

After DH will be trying his Adnam's whisky!!

Thanks jamside and janerowena. We've had tons of courgette fritters cooked in several different ways and also have some in the freezer. Have also had courgettes with pasta, rice and couscous - cooked in a dozen different ways. Courgettes in cakes, courgettes in quiches, courgettes in my dreams....in my nightmares....courgettes for breakfast, lunch, dinner and supper. And now my husband has just returned from the allotment with.....yes, more courgettes. confused So tonight's dinner is courgettes with chick peas, tomorrow will be courgette curry and if there are any left after that I shall skewer my beloved husband and have courgette kebabs!!!

grannyactivist am i in the presence of a fellow allotmenteer? Have you ever tried Courgette Surprise? (It's a surprise it's not courgettes/runner beans/swiss chard etc). grin

Tonight's dinner Quorn tagine with a packet of microwave mixed grains as we are out to local am dram. It's ok, not very exciting- both the dinner and the am dram!

I like the sound of that one bags The addition of ginger beer would suit me. I always add a ginger snap to casseroles to thicken up the sauce.

Tonight I am making poached salmon fillets with new potatoes and samphire. Haven't decided on a sauce yet.

I had fish and chips from the chippie yesterday - not a usual meal chez-nous and I feel the need of some green stuff after the fatty batter so we are going to have a salad nicoise. Isn't it wonderful how your body tells you what it needs? (That's if you listen to it. I never hear when it says it doesn't want chocolate) grin

jamside - yes, indeed. I am a fellow allotmenteer and still chuckling over your 'Courgette Surprise'. I must admit that I'm girding my loins ready to deal with several months worth of leeks and turnips. I really am not complaining (okay, well maybe I am a little), because this year has been amazingly productive - we're on our third harvesting of mange tout, still picking cucumbers and even the strawberries have fruited a second time. I have jams and chutneys aplenty and three freezers full of produce. I'm very glad I have a houseful of people to help eat it all, but must admit to being weary of the same old, same old, every meal. The majority of our meals have been vegetarian for so long that when my husband cooked me a pork burger (with my courgettes) last week I had to ask him what it was. grin

Pan-fried cod fillet with chorizo, cherry tomatoes and red pepper with saffron potatoes. We are laying the new kitchen floor tomorrow so I have also made a Persian recipe of lamb, mixed beans, saffron, cinammon and dried lime casserole for Sunday.

It has been wonderful, hasn't it (not an allotment here but half an acre and 32 raised beds). The chard is still wonderful, masses of salad leaves, beetroot, jerusalem artichokes, lots of leeks, brassica doing well and next year's peas and broad beans sprouting. We are also having a go at growing spelt for our own flour!

Mamie don't you find that Jerusalem artichokes have - ahem- side effects? I certainly Found this and never grew them again, despite finding them very tasty. Do you have a way round this - or just stay away from polite company that night? grin. This is my first year of the allotment and I will try harder next year to get more variety - and less potatoes, chard, courgettes! I am envious of your continuing mange tout crop grannyactivist what variety do you use?
