TONIGHT`S DINNER

Tonight we had Chicken Kiev with Lyonnaise potatoes. I have to admit the CK was not made by me but a local butcher whose ready meals are really, really good but I did make the Lyonnaise potatoes myself and I know I shouldn`t blow my own trumpet but it was a good meal

We are 'grazing' on cold meats, cheeses, pickles, crisps etc. and lolling in front of the telly after a busy, sociable day yesterday. I feel a slice of Christmas cake and a glass of lemonade/elderflower cordial calling to me.

Roast pork with all the trimmings, tiramisu and a good bottle of red with DS and DiL. Good job they are staying over - it is snowing heavily here, so breaking out the chocs and battening down the hatches!

Fry up! All the components of yesterday's meal chopped and fried up together in butter. A tradition in our family, and absolutely delicious! Good job I got a 'Fitbit' for Christmas. Diet Monday.

More chips with cold ham and turkey, plus a bag of hot veg. A homemade rice pud with a dollop of brandy cream in it.

I decided to resurrect this thread smile because the dinner I made tonight was divine and so easy:

Fennel and red onion sauteed (or however you spell that) in a pan - add splosh of white wine and seasoning and let it simmer for 10 mins or so. Tip into a baking dish - place fillets of cod on top of the fennel/onion mixture and bake until the fish is opaque (took about 12 minutes of so). Because there are four of us, the fish fillets placed side by side covered the below juicy mix and all was revealed when people went to dish up. Much ooh-ing and aah-ing.

Served with rice and sweet potato and butternut squash done on the hob with a bit of butter and a pinch of sugar - you have to stir it frequently but it ends up similar to roasting it (this is easier and quicker).

We also had baked salmon but for the first time for yonks I made a creamy parsley sauce as I had a bunch of parsley going begging. Sautéed potatoes carrots and sugar snaps. A glass or two of Chardonnay might have figured in the mix.

We had liver and onions, creamed potatoes, chopped carrots and parsnips and cabbage. , very tasty it was too. Haven't had liver for ages and was surprised how much dearer it was than last time I bought it. Has it become one of those peasanty cheffy foods?

Sorting through the freezer I found some smoked haddock I'd forgotten about. So put together a delicious kedgeree. DH said 'we should have this more often' so praise indeed as he rarely notices what I feed him.

Home made ravioli (stuffed with mozzarella) in a home made arrabbiata sauce, with sourdough bread. (Meal from freezer, frozen because of op)

We had one (each of course!) of the new M and S range, "Balanced For You". Beef and chianti ragu with rigatoni pasta. Two for £7. Absolutely delicious. We had it with braised leeks. Five minutes in the microwave and that's it!

High in protein, balanced carbs, 456 calories.

Home made beef, mushroom and red pepper stir fry with egg fried rice (not quite as good as the local chinese restaurant, but I'm getting there!). I admire anyone who can make their own ravioli, Ariadne. Every time I've tried it has been an unmitigated disaster.

Stir fry veg with prawns and noodles and sweet chilli sauce. Easy, quick and tasty.

Homemade dhal with mango chutney and a mini naan (471 calls grin)

Warming and delicious and best of all the recipe makes double and it freezes well so next time won't even have to bother with all the stirring - dinner in two mins! The other two mini naans will go in the freezer too
