Bechamel sauce v creme fraiche

I know I'll get an answer on this forum.

I'm catering for 12 tomorrow night and decided to do a lasagne, salad, garlic bread etc. I'm cooking the meat tonight as it tastes even better when kept overnight (IMO) but I'm dreading trying to do such a large quantity of bechamel sauce while trying to entertain guests (some arriving at midday) as it's always a but hit and miss with this sauce anyway.

I've read a couple of recipes and reviews where Jamie Oliver uses cream fraiche instead. If this works it will save me hassle and worry.

Has anyone else tried this and if so would you recommend it?

Oh heavens, Aka don't know quite how that works out! My late step-grandmother was titled and an absolute permanently drunk person to the extent of driving her car in reverse about 500 yards into the river darling, but could never understand that dropping in with a tin of cat food, a pint of milk and a loaf of bread wasn't exactly feasible, as we lived in Devon and she was in Hampshire!

Completely leaving aside that her cat had died around 3 years before. Funnily enough, she never seemed to run out of sherry.................confused

Bless her! One side of my family are a bit like that (without the title) they're my Scottish aunts, all in their 80s & 90s and sweet amiable lushes ladies. The other side are Irish and let them get a drink too many inside them and they turn wild.

I'm the only normal one for generations. I think maybe my mother took the wrong baby home from hospital or I'm adopted.

A bit late now but I thought you might like to know that in the United States, lasagna (US spelling) is almost always made with crumbled ricotta rather than Béchamel sauce.

Hey lAKA I've just found I've got to go to a one day course at the uni of Warwick on 11 dec. I'll have a taxi up the afternoon before and I'll be staying in a hotel for the night.

The creme fraiche worked a treat - at least all the plates were emptied smile Thanks Grammyknot for the tip off about addonv milk. It would have been too tjovk and rich otherwise.
