Microwave mug cakes.

I've just found out I can do mug cakes in my microwave.

Does anyone have any good recipes which I could use to make myself a lovely Gransnet 3am mug cake in record speed?

(I mean when I am still on GN at 3am and get peckish, smile)

There's that one where you stir in together, an egg the usual 2 tablespoonfuls sr flour, fat and sugar. And some cocoa. Stir and microwave for a minute or two. Grease the mug first.

But DON'T GO THERE!!!

This is the Good Food one....Good luck!

Microwave mug cake
4 tbsp self raising (SR) flour4 tbsp caster sugar
2 tbsp cocoa powder
1 medium egg
3 tbsp milk
3 tbsp vegetable/sunflower oil
A few drops vanilla or other essence (orange, peppermint etc)
2 tbsp chocolate chips/nuts/raisins etc (optional)
Method

Use the largest mug you have to avoid it overflowing in the microwave!
Add the flour, sugar and cocoa powder to the mug and mix.
Add the egg to the mixture. Mix in as much as you can but don't worry if there's still dry mix left.
Add all the other ingredients apart from the chocolate chips etc (if you are adding) and mix until smooth. Add the chocolate chips and/or the nuts/raisins and mix well.
Centre your mug in the middle of the microwave oven and cook on high for 4-5 mins, or until it has stopped rising and is firm to the touch. Watch it rise as it cooks!

loopy Sounds yummy, but does it really all fit in a mug? Can't wait to try it, maybe I just need to buy a bigger mug? (My biggest is about half-pint size).

It does say 'large'......but I guess you could halve ingredients and cook for less time? I did it in a Pyrex bowl and was fine (pint sized) because didn't think mug was big enough. Next time will do half amounts and use mug (but still whole egg)

I haven't tried cakes in the microwave but I did poached eggs today.
Place boiling water in a cup, drop egg on top and cook for approx 50 sec depending on your own microwave. They were perfect.

I made a marmalade sponge pudding in the microwave last weekend and it was very nice indeed.

Sounds as if you will need a 2 pint mug to make loopylou's recipe!

And custard if it is more like a pudding.

We used to have some kind of sponge pudding done in the microwave every Saturday when the kids were at home. Chocolate, jam, curranty, the lot. (yum!) That was before the need to watch my weight. sad

When microwaves came out I had a subscription for those microwave recipe mags, bet absent wrote them!! But I got a great ring cake recipe and I used it for years... dont ask I have forgotten it wink

I'd forgotten about the microwave sponge puddings, quick and easy, 25+years since I've made one..... I used to buy a little magazine called Home and Freezer, full of easy recipes and I still have one copy with Upside down Amond and Cherry cake, scrummy and very moreish grin

She has some lovely recipes. My favourite is banana and butterscotch microwave self saucing pudding. Yummy, makes your mouth water just thinking about it.

Joy It came from the cookbook that came with my first Kenwood Chef. I'm pretty sure I used to adapt this recipe.

5 oz SR flour
3 oz butter
4oz sugar
1 large egg
3 tbsps milk
half teasp mix spice
1 teasp cinnamon
half teasp powdered ginger
3 - 4 oz mix fruit or sultanas.

For the ginger version I missed out the cinnamon and mixed spice and probably put 2 teasps ginger in (I love ginger).

All in bowl together and beat up with hand mixer.

Microwave for about 4 - 5 mins in greased basin with tea plate on top.

Melt golden syrup in microwave separately.

jings Thank you for speedy reply and the very helpful info! I've got some crystallised ginger lurking in the cupboard and will pretend to be a modern day chef and chuck some of that in. Joe will wonder what's come over me, haven't made a 'proper pudding' for years. Problem is I would normally do ANYTHING rather than cook (yes, I mean ANYTHING... clean the toilet, iron 10 shirts...). Happily cooked for the family for years, but have now hung up my apron and Joe does most of it. But... your pud and loopy's are so speedy and so tempting I'll dig out the scales, dust off my wooden spoon and get cracking this weekend.
