Courgettes

I'm staring at 2 lonely courgettes in my fridge which need to be eaten fairly soon. I usually just roast them with other veg but does anybody else have any ideas on tasty recipes for them? Feeling very uninspired...

You could try adding some spinach it fits perfectly!
