Dessert ideas?

We're having the family round for a Sunday roast this weekend and I am so bored of doing the usual apple/berry crumble... Any other inspiring (but relatively easy) ideas for pudding? Luckily no particularly fussy eaters except for one rhubarb-hater (me). grin

I find summer pudding quick and easy to make. I buy frozen summer fruits. Served with cream or fromais frais.

Cut a banana in half lengthways and again widthways (4 pieces). I banana for each person. Fry them in butter or low fat spread until golden brown. Remove from pan and keep warm. Stir some brown sugar into pan (adding a little more butter if necessary) and cook over a low heat for a few minutes, then add some lime juice (and, optional, some dark rum smile). Place 4 pieces of banana on each bowl, pour sauce over and sprinkle with toasted coconut.
Sorry, no measurements as I just make this up as I go, but it is so easy and so delicious!

What about gently heating a mixture of berries (blackberries, raspberries,red currants and blackcurrants) and pour them over a dollop of vanilla ice-cream. Yummy!

Bramleys stewed with unrefined sugar and cloves. Add a dollop of ice cream - triangular wafer biscuits stuck into the ice cream.

Meringue nests never fail either, Youngeil, as you say.

Once made this, GS aged about 6 said ' Grandma(wait for compliment) this pudding is disgusting! Now grown-up I have not let him forget it!

Meringue nests (bought from M&S) with a dollop of ice cream
and some fresh berries and Waitrose raspberry coulis
are the easiest standby in my house

Favourites here are sticky toffee pudding or fresh mango topped with coconut yoghurt and crushed ginger snaps. V easy.

Luckygirl DD made a clafouti when we were staying in a french farmhouse in the summer. It was delicious. I have just decided that she can make one for dessert this Sunday. (got the family coming).

I find that a pavlova goes down well, it may look daunting but it's dead easy to make. I make the shell the night before, wrap it up well so that it stays crisp and fill in the morning. My favourite filling is whipped cream with soft fruit folded through.

An easy one - a bowl of fruit salad ,strawberries, raspberries, blueberries, melon balls etc plus good ice cream, maybe some shortcake biscuits , everyone helps themselves , no problems.

We are having our church harvest supper tomorrow and I am taking pineapple upside down cake and crème fraiche. That might suit your family on Sunday.

You could make clafoutis - make a batter (pancake-type), stick it in an oven tin, drop fruit into it (cherries are good - even better if they have been soaked in something nice beforehand), stick it all in a hot oven.

One recipe I do is equally easy - make a victoria sponge mixture and put it in an oven tin, drop dollops of jam on it, put flaked almonds on top, stick it in the oven and bingo!

I also make fruit cowpat - this is what the children always called it because that is what it looks like! - it is basically a fruit tart, but you roll out the pastry, paint it with egg yolk, stick the fruit in the middle, fold the sides of the pastry over into a sort of mountain and seal it with egg yolk, paint the whole construction with egg, then shake brown sugar over it - into the oven - yum!

The syrup tart I make is very popular....into a pastry case put dessicated coconut and an assortment of seeds (pumpkin, sunflower etc.) and nuts, sprinkle with lemon juice, pour over syrup, put in oven - great stuff - and a bit Greek I am told.

Lemon meringue is always a favourite around here or a nice apple cake warm with thick cream they go mad for it. grin

It is very easy, and yummy!

If you are after a cold dessert, I can recommend the Nestlé Carnation milk web site for some easy but delicious ones.

I often do a trifle for such occasions as its an assembly job that can be done before hand. I mix it up a bit - a Black forest trifle with cherries and chocolate blancmange. A summer berries one with amaretto biscuits and/or mini meringues on top the cream. Even a coffee walnut one with mandarin oranges.
Hand on heart everyone loves a big layered trifle when its presented!
