Please has anyone any interesting things to do with mangos (not that!!) I buy them every week but only ever serve them in fresh fruit cocktail which is a bit boring. DH doesn't like cream so not a fool or cheesecake unless its creamless please.

I do variations on these:

Mango & avocado salad

Mango salsa

Both great with chicken and fish, or on toasted soughdough/ciabatta.

There are other recipes, I haven't tried this one but it looks quite easy.

Mango will freeze but is only suitable for cooking after being frozen.

Icecream? With thick Greek yogurt instead of cream
(I wonder if that would freeze OK?)

Cut mango in to small cubes
Cube an avocado
Skin and chop a large tomato
Finely chop a red onion
Mix together with a small amount of lemon juice
I use as a side salad and also with baked potato.

This morning I had oats sultanas & mango topped with yogurt for breakfast

I also like mango & lime chutney

I once had some mango ice-cream made by the daughter of a friend. It was absolutely delicious.
I asked how she made it, and she said (as far as I remember) she puréed the mango and added that to the normal icecream recipe.
I just chop it up and mix with fresh pineapple.
Any tips how to choose a mango at the right stage of ripeness?

Chicken and mango salad is lovely. Like melon we prefer them to be very ripe as they have a stronger flavour.

I use Mango in Coronation Chicken, instead of Apricots.

TriciaF I don't think they are ripe enough to eat straight away when you buy them from the supermarket, and they are probably never the same as picking a perfectly ripe mango from the tree because they have to travel so far (don't ours in the UK come from Chile?)

However, I think if you press them gently and they have a bit of 'give' they are ripe.
Likewise avocados which never seem to keep as well here.

I make a great and very easy mango chutney that I serve with cold meats, cheese or curry . It's delicious !

Thank you for the ideas I forgot to ask for pudding recipes as I don't really like fruit within a savoury meal. Ice cream would be lovely but it contains cream doesn't it? I wonder if there is such a thing as a low sugar sorbet.

Yes icecream usually contains real cream, but I make it with a nondairy cream and raw eggs. Probably even more unhealthy!

Could you use whole yogurt (without added cream), eg strained Greek yogurt, to make the icecream?

This cake is similar to the pineapple cake that my sister in law makes. I haven't tried it, but it sounds delicious.

Mango sorbet is so lovely, puree the mango, add to sugar syrup, add a few drops of lime juice and freeze. DH likes it with gingerbread or apple strudle as he cant have cream

I bet you get them cheaper than we do,too. We just grow them and ship them out. Same with avocados. I was irritated to see they sell for less than half what we pay in New Zealand. Not fair. Rotten government.
