Cauliflower cheese.

I wonder if there's a shortage of these too in the UK?
For some reason they're subject to big price fluctuations here (France). Maybe they're imported.
I bought one today for 2.39€, about £1.50. I'm going to make cauliflower cheese tomorrow. What's your recipe?

We're having this for supper tonight. 89p from Morrisons. So no shortage here. I make it as many of you do. A roux with butter use semi skimmed milk a bit of cauliflower water. Strong Cheddar cheese a good pinch of English mustard powder. Grate more cheese sprinkle with cayenne pepper put under the grill. Yummy.

Are you talking about the experts on Masterchef? There would be so many modern recipes that wouldn't exist if only received wisdom was taken into account!

smoked haddock works very well with a good Mull cheddar in a puff pastry tartlet.I keep hearing cookery experts saying fish and cheese dont go together but I think smoked haddock and cheese is a winner

Can I recommend the Cauliflower and smoked haddock gratin which Mary Berry made on TV during her recent series? I made it exactly to recipe and it was delicious and DH raved about it too! It's an interesting twist and easy.

Katek I never eat it raw or just microwave - always heat in a splash of olive/rapeseed oil and add a few things such as chopped herbs, zaatar, spring onions, halved baby tomatoes, chilli flakes, etc.

I treat as though it were rice or couscous.

Not cauliflower cheese (which I love but doesn't like me -reaches for Gaviscon) but has anybody any interesting ideas to jazz up cauli rice?

My dh LOVES cauliflower cheese. Lots of very cheesy sauce (mature cheddar only) with a good tsp of English mustard added.
I often do a cauliflower/macaroni cheese combo - breadcrumbs and more cheese on top and whack it under the grill. V good one dish supper - I have made it for unexpected guests when I happened to have a nice big cauliflower - there wasn't a scrap left.
Have also sometimes added a bit of broccoli if I've got any going begging.

Hi Sue, You can reduce the smell of cooking caulies by putting a thick(ish) slice of bread on top while its cooking dispose of it after of course!

Break up cauliflower into small florets and parboil in salted water so not fully cooked. In a casserole dish melt generous knob butter and then stir in tablespoon plain flour and make roux and add milk, black pepper, dijon mustard and a little strong mature grated Cheddar cheese to make thick cheese sauce. Add cauliflower pieces and then sprinkle grated cheese generously over to and brown under grill or in oven. The cauliflower will continue to cook in the sauce.

Stimulated by this thread I made some tonight cauli and brocolli cheese with a layer of leeks and spinach as earlier poster advised.
My own favourite topping of crispy fried onions cheese and a little cayenne.

Served with sausages and tommies touch of ketchup and slice of toast. Very tasty.

I'm low carbing so it's double cream heated with cream cheese and a nice strong cheddar top the cauli sprinkle some parmesan and paprika and under the grill x

Cauliflower Cheese, now my mouth is watering ?
When I make one, I put slices of mozzarella on the top followed by a liberal coating of Parmesan before baking in a moderate oven until golden brown. You get the most wonderful cheesy taste with that lovely stringy mozzarella texture.

I make cauliflower macaroni cheese, sometimes with a few halved tiny tomatoes in it as well. I cook the macaroni and cauliflower florettes together as they both need about 9 mins, make a butter roux cheese sauce in my la cruset, stir in the cauliflower and macaroni, sprinkle grated cheese on top and stick it in the oven to brown. Delicious.

I make a version of this lovely comfort dish using a mix of cauli and broccoli florets. These days I make a Hairy Dieters cornflour based sauce and add mature cheddar. As I type I'm wondering if chopped spring onions would work. I usually lightly steam the veg and top my dish with steamed potato slices and more grated cheddar. Then bake in the oven. I like my portion sprinkled with Worcestershire sauce.
I'm going to try the creme fraiche version and the bay leaf hint.
