Has anyone ever tried to recreate this yummy cheesecake at home?! I would love to know the recipe if anyone has succeeded.....wink

I make a lime and ginger biscuit cheesecake with mascarpone, lime juice, grated zest, trickle dark chocolate on top in a zig zag pattern, put in fridge to chill. My lot seem to like it anyway and not a lot of faffing about.

Personally I don't like cooked cheesecakes, only the ones set with gelatine as they taste much fresher and don't stick to your teeth. I like citrus ones. Very easy to make with digestive biscuit base, lemon jelly and cream (Philadelphia type) cheese, yogurt etc.

Look online for Nigella's cheesecakes. Baked in a water bath, they are very good.

gagagran I made that one too! Oh so rich....I got in a pickle with melting the chocolate in the microwave and it started to 're solidify almost immediately when I added it to the other ingredients.

I very often make mine with a jelly.
Eg
Base - 11 digestive biscuits crushed and mixed with 3 ozs melted butter. (I often add some melted white chocolate - helps to firm up the base ) press mix into a 23 cm loose bottom tin then chill.
Filling
375g cream cheese
300ml double cream
Zest of two lemons
Juice if one lemon
1 lemon jelly
2 tablespoons of icing sugar ( or enough to sweeten to your taste )

Melt the jelly in about 3 tablespoons of boiling water ( finish off in micro )
Whip the cream, then add the cream cheese, and mix
Add the zest and juice to the jelly Then add the jelly mixture to cream and cheese a little at a time. Add the icing s Spoon/ pour into tin. I freeze it so that I can tip it out onto a flat plate before it defrosts, but it could just be chilled. This can be made with different jellies and fruit. Lime and white chocolate is good too.
