The co-op New York style cheesecake is far too nice grin

I very often make mine with a jelly.
Eg
Base - 11 digestive biscuits crushed and mixed with 3 ozs melted butter. (I often add some melted white chocolate - helps to firm up the base ) press mix into a 23 cm loose bottom tin then chill.
Filling
375g cream cheese
300ml double cream
Zest of two lemons
Juice if one lemon
1 lemon jelly
2 tablespoons of icing sugar ( or enough to sweeten to your taste )

Melt the jelly in about 3 tablespoons of boiling water ( finish off in micro )
Whip the cream, then add the cream cheese, and mix
Add the zest and juice to the jelly Then add the jelly mixture to cream and cheese a little at a time. Add the icing s Spoon/ pour into tin. I freeze it so that I can tip it out onto a flat plate before it defrosts, but it could just be chilled. This can be made with different jellies and fruit. Lime and white chocolate is good too.

gagagran I made that one too! Oh so rich....I got in a pickle with melting the chocolate in the microwave and it started to 're solidify almost immediately when I added it to the other ingredients.

Look online for Nigella's cheesecakes. Baked in a water bath, they are very good.

Personally I don't like cooked cheesecakes, only the ones set with gelatine as they taste much fresher and don't stick to your teeth. I like citrus ones. Very easy to make with digestive biscuit base, lemon jelly and cream (Philadelphia type) cheese, yogurt etc.

I make a lime and ginger biscuit cheesecake with mascarpone, lime juice, grated zest, trickle dark chocolate on top in a zig zag pattern, put in fridge to chill. My lot seem to like it anyway and not a lot of faffing about.

I made a white chocolate and raspberry cheesecake last night as an Easter treat for DH and we have just sampled a piece. It is delicious and looks very professional according to himself. I got the recipe from Mary Berry's recent TV series(you can google the recipe) and I will definitely make it again. Yum.

i don't think you can beat james martin for a cheesecake of any description. you can find his recipes online on the bbc website or, if like me, you've collected all his recipe books, you've got them on your bookshelves.

Did you say white chocolate cheesecake with raspberry topping - yyyyyyyyyyuuuuuuummmmmmm Do that!

Craftycat Fri 14-Apr-17 11:36:57

Oh Crishappy- that sounds wonderful!
I was going to do white chocolate cheesecake with raspberry topping for Sunday & also a sticky toffee pudding but I will be doing yours now. Can't wait to try it!!

Jalima1108 Fri 14-Apr-17 10:15:46

Yummy, apart from the chocolate - especially white!! grin

I prefer the set cheesecakes but I could eat a New York cheesecake if offered wink
It just needs some soft fruit or a good helping of coulis to offset the denseness. And cream

MawBroon Fri 14-Apr-17 10:11:46

Get thee behind me!! grin
La la la la (not reading the recipe...white chocolate...)

Chrishappy Fri 14-Apr-17 10:05:10

Best cheesecake ever is :-

1/4 or double cream
Large pkt of white choc buttons
1 tin mango slices ( drained then liquidised)
3/4 pack oatie biscuits
1 1/2 oz melted butter
Crush biscuits. Add butter and press into deep cake tin .refrigerate.
Drain and liquidise mango slices
Beat cream ad cream cheese and melted chocolate ( give a good beat)
Stir in half of mango
Pour over biscuit crumb and refrigerate .after about 1/2 hour pour rest of mango over the top .Leave to set .
Yummy

Try Mary Berry for a baked cheesecake recipe.

loopylou Fri 14-Apr-17 09:05:20

I don't like cooked cheesecakes, much prefer the chilled versions.

Jalima1108 Thu 13-Apr-17 17:20:35

It shouldn't be mousse-like, it is more like a dense cake texture. Or so I thought.

Jalima1108 Thu 13-Apr-17 17:19:15

A Waitress to serve it all would be nice too Lona

Jalima1108 Thu 13-Apr-17 17:18:18

I have made a New York cheesecake but it was so long ago I've forgotten which recipe I used, sorry. It was very nice though!

Waitrose or M&S Sicilian lemon tart, Waitrose apricot tart, all lovely and just sitting on the shelf waiting for those who cbb to bake these days smile

hummingbird Thu 13-Apr-17 17:12:34

Nigella has a good recipe for New York cheesecake - might be making it this weekend!

alovelycupoftea Thu 13-Apr-17 16:42:26

Hmmmm, too creamy & mousse-like - far too squishy. Think I need to put more cream cheese and less cream in wink

alovelycupoftea Thu 13-Apr-17 11:26:43

Ooh, lots of replies, thank you so much! I am doing Attempt 1 for lunch today - I looked at the ingredients list on the Waitrose website, and the closest recipe I had was Lorraine Pascale's Doorstep cheesecake, so I will report back!

notnecessarilywiser Thu 13-Apr-17 08:05:11

Agreed, Lona. Don't make the mistake I made when catering for just two of us, though - Waitrose Smooth & Tangy Lemon Tart 300g is a massive disappointment. It has to be the Sicilian one (530g).

Lona Wed 12-Apr-17 22:18:54

Waitrose!!!
