Cookery programmes and hygiene

Why do the contestants not roll up their sleeves when cooking, really bugs me. Some people are there in heavy jumpers and must be so hot in the kitchen.
My husband is a chef and likes his meat pink, he hates it when he has to cook mine to death (his words) smile

I like my steaks "medium", or just pink in the middle. I wouldn't dream of serving pork or poultry pink. At school, I was taught that you had to cook poultry all the way through to kill the bacteria within, the same with pork.
My DH was brought up on a farm and shudders at the thought of meat any way but we'll done.

As a 3 year old DD used to say to me when we were watching something scary on TV
"It's only acting Mummy"
Might I suggest we add some extra seasoning?
I.e.
Take it with a pinch of salt!

I too have a horror of pink meat especially pork, I'm afraid I tend to "cremate" meat. I wonder sometimes if they use different chopping boards for meat and veg prep too. I hate the way some of them,especially men, run their fingers through their hair whilst cooking. Do they wash the spoons they use to taste the food during cooking?
Saying all this I love cookery programmes especially Masterchef and BakeOff.

The only person I have seen to wash his hands and also suggest to others that they do the same was James Martin when he ran his Saturday morning programme.

I guess I must just be an old-fashioned out-of-date cook. Does anyone else shudder at the Masterchef type programmes where cooks/chefs are praised for serving poultry and meat 'pink'? To me it is just not cooked. My DM and her mother were excellent cooks with wide repertoires but serving pork, lamb, or game birds still bloody would have given them the horrors.

Has food hygiene and risk of infection changed so much we don't bother about it any more?

Which makes me wonder why no one ever, in TV kitchen or professional ones shown, washes their hands before cooking or between types of food. They aren't shown washing the produce, either. Outbreaks of food poisoning have been traced to soil on potatoes and vegetables.

I know it isn't riveting television, but surely a second or three here and there would be an investment in food hygiene education?
