1 onion. Ideas please

Okay Gransnetters. A challenge for you.
My Partner has just brought home a lovely large red onion that he rescued after it fell off a tractor.
It got me thinking as to what I could do with it. I am thinking something simple with the onion as the key ingredient.
I would love it if you guys could give me any ideas and recipes.

Oh my goodness, I am completely spoiled for choice, and my mouth is watering at all the recipes.
Thank you all for your ideas.
I am definitely going to give Grannyknots Mums recipe for the fritters, regardless, as I too remember the days when money was short as a child. I remember my lovely Mum cashing in her Brooke Bond Tea stamp card for 5 shillings when she was short of money to buy food for our dinner.
We never starved though.

1974cookie - you're so right, we never went hungry despite money being tight.

So many wonderful ideas generated by just an onion! I will use Baggs idea. I love sweet potato.
