Pineapple

Someone gave me a huge pineapple last week. It was green at the time but is now in perfect ripeness - you can smell its perfume.
I've peeled it and cut it up but there's far more than we can eat.
Would it work to freeze it for later use?
Otherwise, any other ideas?

My GD says pineapple makes her lips tingle and swell , so does not eat any now

Anyone know if you can freeze left-over tinned pineapple too? I often open a tin and use some, put the rest in the fridge and forget to use it up. Such a waste.

I'm so surprised at all these replies! Never thought pineapple had so many qualities.
I'ved used pineapple and juice in a sweet/sour sauce with sugar and cider vinegar. To pour over deep-fried chicken in batter
I think pineapple juice can be used with flour for a sourdough starter. If you make bread. Never tried it yet - I'm too impatient.

Fresh pineapple apparently has enzymes which can cause a mild allergic reaction - therefore the mouth tingle, the enzymes are affected by the canning process which uses heat or by cooking, you are less likely to get a reaction from either of these forms.

Yes you can freeze tinned pineapple. I just put it in little containers ready for when I need a pizza topping or in a salsa type salad etc.

Yes, the tingling in the mouth has happened to me too on occasion. Don’t know why though.

I've heard , too, that it's enzymes that give you the tingling sensation. I think it's the same with kiwis. If you're making something that has to set with them, you have to use agar agar instead of gelatine.

I have a recipe in my trusty Good Housekeeping cookery book for a sweet and sour sauce. I usually freeze half of it because the amount are quite large. I'm attaching a picture, because I cba to type it up!

Sorry it's sideways on. I'm sure you can use fresh pineapple as well. I just chuck all the ingredients in the blender and give them a whirl, then pour them into a saucepan and stir till boiling.

If anyone is still interested in pineapple, there’s a good recipe on bbc good food by Jack Monroe called sunshine oats. I’ve just made this and it’s delicious. I had a pineapple to use up and so I made this, hope it helps.
