What are you all having to eat tonight? I cook every evening and have been getting bored with the usual meals. Tonight, I've made a Chicken Jambalaya - it's a Hello Fresh recipe I had ages ago, but I bought all the ingredients and have adapted it a bit.

I've made a carrot cake for afters.... with cream grin

Chicken and mushroom risotto tonight, I think. The left over roast chicken needs using up.

Cheesy mash with tomatoes and baked beans.

Urmstongran enjoy! We had that last night. Tonight it’s sausages, mash and beans, we usually have chicken sausages, but I found some pork chipolatas in the freezer left over from Christmas, so it’s them.

Asian inspired haddock stir fry.

Mollygo Tue 19-Jan-21 16:26:05

Salmon with lemon and dill sauce, rice and green beans. Crème brûlée.
DH wants my red cabbage and beetroot mix instead of green beans but I’m not sure. . .

Pork meatballs in a Moroccan spiced sauce and spaghetti pasta.

I had the most delicious spaghetti Bolognese which my dh made for almost the first time in his life. I told him it had a lovely wee kick in it he then admitted with a wink that he had added chill flakes and loads of garlic sh sh don’t tell my ds she’ll say she doesn’t like it. However I heard her say to my dh that was good. Hope there’s enough left over for a second evenings dinner - just for me. wink

Curry chicken tonight cooking away in slow cooker. Smells absolutely delicious!

Jaxjacky Wed 20-Jan-21 16:35:30

Slow cooked brisket left from Sunday, chopped up in gravy with a topping of bubble and squeak which was frozen from Christmas, with broccoli.

Cheese and potatoe pie with onion sauce and a side mixed veg.

Fish pie ( cod, salmon and smoked haddock) Topping is a mixture of swede, potato and carrot.
Served with broccoli and baby corn.

I'm also having fish pie, but the topping is mashed cauliflower with a big dollop of creamed horseradish and grated cheddar.

Served with roasted celeriac & red onions.

Cod, leek, celery, carrot, potato, parsley in the soup maker, with homemade bread.

Macaroni/cauliflower cheese combo. Breadcrumbs and extra cheese on top, whacked under the grill. One of dh’s favourites.

Roast chicken and oven chips

Shepherds pie I cooked the filling yesterday, I’ve just mashed some potatoes for the top and I’ll sprinkle a bit of cheese on top before I put it in the oven. Green beans and carrots with it and banana and cream for pud.

Mollygo Sun 24-Jan-21 12:41:37

Cajun Pork fillet with glazed oven-baked carrot and parsnip. Lemon posset for pud.

Its a takeaway roast pork dinner, with all the trimmings, tonight - from a local pub. The food is always excellent and the portions are huge so it'll feed us for two nights!
Value for money and a night out of the kitchen, perfect!

Mollygo Sun 24-Jan-21 12:52:22

Valels Our local pub does takeaway meals at the weekend as well, but I’ve never tried them. Perhaps now is the time.

Since we retired, we very very rarely have dinner. Main meal about 1 to 2pm, sometimes later. Today was very simple, boiled potatoes with a bit of butter, peas, carrots and sweetcorn and a quiche.

In the evening usually soup and toast, and a mix of fruit and Greek yogurt (fruit yogurts on their own far too sweet). And later, a couple of squares of best quality 70% chocolate as a treat.

Valels Sun 24-Jan-21 12:58:07

Mollygo definitely worth a try. We order on Saturday, pick it up 5pm Sunday. My mouth is watering already, watching the clock till it's time to go!

Riverwalk Sun 24-Jan-21 16:12:40

Lunch was scallops & chorizo; dinner will be sirloin steak.

Goodness knows what I'm going to eat for the coming week!

Callistemon Sun 24-Jan-21 17:27:03

Rib of beef is simmering in the slow cooker on top of root vegetables.
I'll do some kind of potatoes and greens to go with it.
Fruit and yogurt (custard for DH) if we feel like anything else.

I''ve just polished off a plateful of shepherd's pie with runner beans. Goodness me it was delicious although I say it myself. Enough left for tomorrow. It was minced steak which makes a difference to ordinary mince. The butcher minces me a cob of steak--minus the fat.
I was going to have made an orange sponge pud. but I cut the orange into quarters instead.
