What's everyone having for dinner?

What are you all having to eat tonight? I cook every evening and have been getting bored with the usual meals. Tonight, I've made a Chicken Jambalaya - it's a Hello Fresh recipe I had ages ago, but I bought all the ingredients and have adapted it a bit.

I've made a carrot cake for afters.... with cream grin

Bacon, egg, mushrooms, tomatoes and toast. We never fancy a cooked breakfast so have it every Monday tea instead.

For us, I’ve been dithering between cauliflower/macaroni cheese, and some semi-veggie mince that’s in the freezer (with mash and sprouts) - dh would devour either - but I think the cauli/mac is going to win.

Ottolenghi baked aubergines with spices and bulgar topped with yoghurt and preserved lemons. As a side I am doing another ottolenghi salad with marinated Pearl barley, feta, red pepper, roasted cashew nuts with plenty of fresh parsley and coriander.
I’m a total fan of this chef and writer and enjoy spending several hours a few times a week in a afternoon preparing dinner. He is a magician with his flavours and presentation.
The other positive side of cooking his fabulous meals is daily trips to the shop for an abundance of fresh vegetables and herbs.

I have just been to M & S food hall on a rare trip out, and thought I would buy something for a change from our usual menus. I was overwhelmed with choice! But taking our individual preferences into account, I couldn’t decide what to get. I wish I dared to be more adventurous, but I don’t like curry, I avoid pastry, and DH has things he won’t touch, so I gave up and settled for meatballs. At least they were good quality, reduced for quick sale.

Yesterday I had a stir-fry, but discovered at the last minute that I had run out of soy sauce and the black bean sauce I thought I had was nowhere to be found. I made the best of it with black sesame seeds, but it was a poor effort. So today I will be stocking up with appropriate ingredients.

The butcher had some very nice lamb’s liver yesterday so today it will be liver, bacon, onion gravy, mashed potato and veg! Comfort food.
Anno you have reminded me that I need to stock up on soy sauce too. Thankyou!

We're using the slow cooker - beef, vegetables and a 'beef casserole mix' sachet. With mashed potatoes and broccoli.

H1954 what liquid do you add to cook the gammon joint in your slow cooker?

We had sausage and mash last night with cauliflower cheese.
Never had those together before but wanted to use the cauliflower while it was still good.
It actually went well together, I did make carrots for a bit of colour.

We're having steamed cornish haddock from our wet fishmonger, sitting on a bed of steamed baby spinach, a side of creamy mash, all slathered in home-made cheese sauce. Mr. L's favourite meal! smile

Tonight we are having chicken, with some sort of concocted sauce, with creamy mash, carrots and steamed cabbage.
Last night it was scampi and chips with salad leaves.

We had - would you believe Pancetta, Marmite and spaghetti from BBC Good Food. We've had it twice now and it is so tasty but simple to make. Even the daughter who isn't that keen on marmite loved it. Salad and crusty bread yum!

A prawn dish for us tonight, cooked in the wok (so easy!) Olive oil, chopped red onions, chilli, pepper, courgette, garlic, peas, sweetcorn, fish stock, tarragon, oregano, salt & pepper, creme fraiche, rice (cooked in the microwave and added to the wok).

Salmon in honey & soy sauce marinade (little sesame oil & grated ginger) with spring onions, celery & peas with egg noodles. Glass of Chablis.
