What's everyone having for dinner?

What are you all having to eat tonight? I cook every evening and have been getting bored with the usual meals. Tonight, I've made a Chicken Jambalaya - it's a Hello Fresh recipe I had ages ago, but I bought all the ingredients and have adapted it a bit.

I've made a carrot cake for afters.... with cream grin

Chef is cooking a chicken stir-fry, which will include a small amount of chicken and a lot of (home-sprouted) bean sprouts. (Preceded by pre-dinner drinks - 'cos it's the weekend!! Yipppee!)

With rhubarb and custard for pudding....Usually eaten later in the evening.

May I ask what salmon people buy? I have been put right off having seen some horrendous photographs of diseased farm salmon. (Sorry to bring the tone down ??‍♀️).

Tonight we will have Lidl Ribeye Steak with boiled new potatoes and a whopping salad with baby leaves, tomatoes, golden kiwi fruit and spring onions. Home made yoghurt dressing.

fevertree I assume you are talking about the lice getting into the fish at some salmon farms?
I buy Sainsburys responsibly sourced Scottish farm salmon fillets.

I used to buy wild salmon, but then read that it wasn’t sustainable so switched to same as puzzler

We have just eaten a half of a very nice sausage, mushroom and tomato casserole with mashed potatoes and steamed green beans. The other half will go into the freezer for another meal.

Baked cod on a bed of curried lentils, plus roasted peppers, red onions, garlic, etc.

The lentils and veg were previously batch-cooked and frozen.

Trout fillets with herb butter wrapped in Parma ham, new potatoes and salad.
It was delicious. DH followed it with a yogurt of some description, I had a cup of tea.

Omelette with bacon and shitaki mushrooms cooked by my husband, delicious. He does not cook often but he is a great egg cook, eggcellent in fact. Strawberries and Greek yoghurt to follow.

Cote Brasserie fish pie with dauphinoise potatoes and minted peas. Apple tart with ice cream to follow.
An excellent Puligny Montrachet to go with the main course.

I'm amazed at how many posters have desserts. We snack on fruit but only have desserts when we eat out. I've been doing my elderly parents shopping and cant believe how much carnation milk they go through. Personally cant stand the stuff. confused

Tonight we are having roast leg of lamb. This might seem extravagant for just the two of us but they were on offer at Sainsburys. Last time I bought one we had one roast dinner, two individual shepherd's pies and a lamb, feta and mint bake, and generous portions too.

Roast half leg of lamb tonight, with roast potatoes and a medley of veg since don’t have enough of any one. Carrot, celery, sugar snap peas, petits pois.
