Yes I would! Only recently, I've stopped putting perfectly good cabbage stalks etc. in the compost bin. I add them, in chunks, to my (favourite) roasted veggies or grate them into salads - and they're tasty!

I don't even make soup with them. I just cut them into chunks and cook/serve along with all the other vegetables.

(My mother made us cut a V shape in every cabbage leaf - and throw away all the stalk, before shredding them for cooking. Now I just slice them, along with the rest.)

If you peel off the thick outer skin to leave the crisp juicy inner, you can even eat the chunks raw (not the coarser lower parts of the stalk) Try it, you may be pleasantly surprised. I munch these while cutting up the rest of the cauliflower.

I do all that with broccoli stalks - use the thick parts peeled and cut in cubes, and nibble them raw while I'm doing it. Can't eat Cauliflower though - may as well swallow a hand grenade.

I always prepare, cook and eat the stalk from vegetables, including cauliflower. Never had a tough one.

I don’t waste them or broccoli stalks they are chopped up and used in the recipe.

Of course. Cauliflower and broccoli stalks are great in soups: why wouldn't they be?

I also include them when making cauliflower puree.

Who mentioned eating peelings? This thread is about using cauliflower STALKS. We use the stalks of celery, chard and rhubarb, so why not the stalks of brassicas?

Try the peeled inners sometime, EV Your neighbour's bunnies may not get them in future.

The most nutritious and vitamin-full bits of most vegetables are just under the skin/peel - so the bunnies are eating well.

I read somewhere that cauliflower stalks give you terrible wind so I have always avoided them. I will give them another go.

I use them when I’m making cauliflower rice or broccoli rice.
Nobody has complained yet.

Why wouldn't anyone eat them? The stalks, that is. They are a good, nutritious part of the plant.

Come to that, so are the so-called 'peelings' on many veg.
Not that I eat peelings - they are still very much attached to my carrots, potatoes, apples etc. when I eat them, so definitely not peelings.

Yes I do.
This is but one of many of my
waste not want not learned from my late mother during the years of food rationing.

I use the green leaf part of cauliflower along with the head, but it has never occurred to me to use the stalks. Like others, I absolutely love the raw peeled broccoli stem - could eat it all day long (probably best not to, though!?).
