Before I dispose of them in the food waste bin, would you use the stalks of a cauliflower to make soup? I would obviously add other ingredients. Thank you.

Definitely...I love cauliflower and smoked paprika soup and always use the stalks as well smile

EllanVannin

I save them for the neighbour's bunnies grin

Blimey, I haven't reached that stage yet, eating stalks and peelings !

You've not lived mate! Never had a jacket spud? Most veg only has a peel as you put it to prevent attack In the wild! Old fashioned way was to strip off all evidence of raw state to show how well off and posh one was! Zero to do with edibility, (a few exceptions as we know)

Thank you everyone… what a no-brainer using the stalks and it never even crossed my mind. ?. From now on the stalks stay.

Yes, in soups, and I have a fabulous cauliflower and sweetcorn chowder recipe, where you added the chopped fried leaves, more sweetcorn and peanuts as a topping. Yum.

I’ve always just chopped and cooked up the whole lot together.

Yes. I use cauliflower, broccoli and cabbage stalks. I usually serve them up with the veggies themselves, or chop them into soup and stew. I’ve also stopped peeling carrots - just give them a wash and cut out any hard bits before cooking.

If I don't use all if them as most of the Posters do, then my dogs like them for a good chew, together with raw carrots and parsnips! 'Waste not want not!!'

Tusue Sat 08-Jan-22 12:27:26

I eat all stalks from veg, I either chop them up and cook with the veg itself or I chop and use them in soups or vegetable chilli.

Joesoap Sat 08-Jan-22 12:45:24

I love to peel the stalks then eat them, always done this since we were little.

Pedwards Sat 08-Jan-22 12:48:28

I agree elegran, the broccoli that I buy at my greengrocers is sold by weight, so apart from the issues with waste, I’ve paid for those stalks! Jamie Oliver uses cauli and broccoli stalks a lot in his cooking

MissAdventure Sat 08-Jan-22 13:10:31

I always eat the stalks raw.
I love cauliflower.

Msida Sat 08-Jan-22 13:17:35

Yes of course why not, they taste no different from the flower perhaps need a little longer to cook

I love raw broccoli stalks. I usually just take the rough end off and then when I’ve taken the florets off give the stalk a light scrub. I nibble bits raw and cut the stalk into rings, boil it and serve it up with the rest of the veg. Put it in before the rest of the broccoli though because it takes a bit longer to cook.

nipsmum Sat 08-Jan-22 13:45:58

I use every bit of cauliflower and broccoli. Stalks leaves florets all of them

jillyd60 Sat 08-Jan-22 13:49:01

When my daughter was young, i found a recipe using Broccoli stalks and she used to love it, it was cooked Pasta stirred through with Broccoli stalks which had been stirfried along with chopped Anchovies, in olive oil and croutons were also added to the stirfry

Cauliflower cheese with a baked potato is one of my favourite things yo eat. But I don’t use the stalks at all

Shropshirelass Sat 08-Jan-22 14:06:36

Yes, definitely and the cauliflower leaves! You can roast the leaves in goose fat and season well. I do this with kale too. Nothing goes to waste.

SachaMac Sat 08-Jan-22 14:25:34

Yes I eat the lot, I cook the stalks together with the florets. I put them in soup, cauliflower cheese or grated up in cauliflower rice. At school we were taught to cook cauliflower cheese by cooking the cauliflower whole.

seadragon Sat 08-Jan-22 15:30:55

Heard someone on the telly say Cauliflower stalks were rich in vitamin C. Mentioned this to DH who does most of the cooking and he put them in the Cauliflower Cheese whole!!! Not a pleasant experience. However I do make soup every week so will include them in that next time I make cauliflower soup and offer to chop the tender outer leaves for him next time he has a cauliflower in his sights...!!

GrammarGrandma That recipe sounds good, I’ll give it a try. Thank you.

EmilyHarburn Sat 08-Jan-22 17:46:19

They are great in soups. I put the florets in the steamer and the chopped up stalk in the bottom part with the water and that gets them cooked ready for the soup plus I use the water.

Pammie1 Sat 08-Jan-22 18:03:09

Broccoli stalks are also good in roasted mixed veg and thinly sliced in stir fries.

Riggie Sat 08-Jan-22 18:19:04

Oldnproud

I don't even make soup with them. I just cut them into chunks and cook/serve along with all the other vegetables.

This. Along with any decent leaves. I always use broccoli stalks too.

GreyKnitter Sat 08-Jan-22 18:21:18

They’re yummy! We use almost all of the cauliflower, including the leaves.

My gran used to grow loads of broccolli in the 50s-60s but she called it calabrese. Looked, cooked & tasted the same
