Oú est le moutarde?

We are currently holidaying in France, there is no mustard!
Not even an outrageously priced artisan mustard.
The Leclerc supermarket in Bayeux is enormous, you can furnish your home, equip your garden there but alas no mustard.
Arlette Gondre (Pegasus Bridge cafe) went to England last week to buy French mustard!

Powdered mustard is ideal mixed with white pepper and salt, to coat a chicken with before baking. It doesn’t taste like mustard but gives a very nice flavour to skin. Incidentally, try cooking your chicken in the microwave for 8 minutes or so, before putting it in the oven. It seals the chicken, which turns out beautifully moist.
A grandson has used this tip to turn around the fortunes of the pub where he works as a chef. In fact the brat has pinched all my best recipes!

I buy a joint of bacon for boiling most weeks and make myself some very inelegant sandwiches which I plaster with mustard. I too saw all the different mustards at a German shop and tried their ready mixed mustard. What a waste of money. So weak.
So I’m making my own again. Using mustard powder. Four pinches of powder in a soup ladle and a few drips of water; made in the morning ready for sandwiches.
The German mustard, supposedly English style, is in fact typically German. Very mild and beautiful for dipping sausage and chips, in.

Buy a tin of Coleman's mustard powder and make up you own!
As far as I remember the instructions are on the tin.

If they are not, try 1 tablespoon mustard, 2 tablespoons sugar, a pinch of salt, ditto pepper and as much vinegar and water as needed to make the consistency you want.

Taste it cautiously, and add more sugar, or honey, if it is too sharp.

You can use malt vinegar, or apple cider vinegar, as you please.

Alternatively, you could look in your shops for German mustard - there is no shortage of it here.

Our Local Sainsbugs had loads yesterday, all types. I only bought two jars, one Whole Grain, one Dijon ?.

All of us ‘in the know’ will now be stockpiling mustard, like loo paper at the start of the pandemic. Though maybe one is a tad more essential than the other.?

Report from the front line - our organic shop had two jars of moutarde and ortie (nettles) and one with lemon. No plain mustard at all.

I read that the war in Ukraine also plays a part. . Presumably mustard is grown there.
