Vegan curry: sweet potato, butternut squash & black-eyed beans.

It's defrosting as I speak, batch-cooked in the slow cooker, and will be re-heated in the microwave - all very economical, and tasty! ?️?️

Canellini cauli-roasted dressed - served semi-warm. Wedge salad with aquafaba dressing (and no cheese), bread, fruit. Vegan day!

We went to see our DD today and knew we would go for a pub lunch. I made a pan of minestrone soup last night ready for today's tea.

I have a chicken traybake in the oven: chicken thighs with tandoori paste, on a bed of red onion, garlic, aubergine, red pepper, courgette, purple carrots. ????️?

One portion for now, three for the freezer smile

Stir fry - basil, red pepper, cauli, carrots, onions, celery, french beans, sauteed tofu squares - on basmatti. Fruit and nuts.

Yesterday I cooked a piece of gammon in the slow cooker and my S and GD had it with roast potatoes,home grown runner beans, broccoli and onion sauce.
I just nibbled a piece as I have not been well and had no appetite.
Feeling better today so I shall have some with a small jacket potato and a tiny salad.

I roasted a gammon joint yesterday such good value. I made a big pie and soup with the leftovers.

Goodness knows - yesterday's chicken was supposed to 'do' tonight's stir fry too, but Gchn turned up and there's not much left! Beans on toast I guess.

Lamb stew, made from the remains of a half leg roast that’s been in the freezer! Bit of a faff, since needs prepping the day before (simmering with onions and left to cool overnight to get all the fat off) then picking off all the lean. Will add pearl barley, potatoes, carrots, turnip and lamb stock cube(s) to the mix, peas for the last couple of mins.
Might not sound very tasty but it is!
Not very economical fuel-wise, though.
