Slow cooker one pot meals

I have seen the good suggestion that we use slowcookers more. I have also seen Jamie Oliver's One Pot suggestions.

So can we discuss simple one pot (slow cooker pot) recipes?
I am trying to greatly reduce meat in my diet, so veggie dishes which can be a meal are a good idea.

I'll put my thinking cap on, but meanwhile - what do you like or suggest as a one pot slowcooker meal?

I live on my own and my slow cooker is large enough to produce a meal for tonight, and tomorrow and there is usually enough left over for 2-3 more meals so I freeze them for the times I cannot be bothered to cook.

I am not very adventurous so it would be casseroles or curries. If I am cooking one meal I may as well cook 5 or 6 and save energy.

I always find that chilli comes out well in the slow cooker.
Half and half with beef and lentils, then throw in anything else you have knocking around.
I use puy lentils, because they have a nice texture.

I suppose the best way would be to make a basic meat or meatless mince, freeze it in portions and take one out to turn it into what you fancy on that day.

Veggie sausages I think, are a good base for a lot of dishes, although they get a bad press, sometimes.
They can be picked up at £2 for 8 (Linda McCartney) if you're in luck.

I generally make a stew in the slo-cooker - I make enough to freeze down for another meal (for 2 of us).
It then just needs defrosting, and gently warmed up on the hob or in the microwave. Dumplings aren't the best, but are passable.

I also make chicken recipes or pork chops in a mushroom sauce.
Just need to add a jacket potato, hunk of buttered bread or mixed vegetables.

Sorry, just re-read the OP. You can make veggie stews, curries and bolognese sauces in a slow cooker too.

I made a lamb tagine on Friday, froze enough to feed us both again. My meat dishes usually have lots of veg, pulses/beans so half a pound of meat does 4 meals.
I use the slow cooker for soup, sauces, meat casseroles, etc.

Another tip - I use the ready chopped casserole vegetables from the chilled section, often in slow cooker dishes Douglas2b, they are a great time saver and no waste.

I really like the humble old pea in my dishes. smile
I like all the different ones, tinned, frozen, mushy, fresh, marrowfat, sugarsnap.
I haven't got a recipe, I just felt like saying.

Years ago I remember doing pears in red wine - with cloves - in a slow cooker. - But not as a main meal, of course grin

Cook a ham hock or two in the slow cooker with root vegetables, onion and celery. Keep the stock, strip any meat off and add split peas with a potato or two to thicken, cook on low for a few hours, pea and ham soup.

I do stewing steak and mushrooms in the slow cooker and make enough for three meals for the two of us. I usually add chopped onions and anything else that needs using up - bacon, chillis, bell peppers, carrots, lentils, split peas, barley, some red wine. One lot for dinner with a big baked potato, one lot frozen for a suet pudding filling, one lot frozen for pasties or a pie.

How do you - if you do - do a Veggie Pasta dish in the slow cooker, please?
I've added a handful of Pasta to a stew in the past in the s-c but not done a pasta dish.

I cook lots in the slow cooker. Recently did shoulder of lamb, today we had jointed chicken in a spiced marinade. I'm cooking down tomatoes for the freezer as they take up less room and it's on this evening with the remains of the jointed chicken + veg to make a soup, I might add a tin of chick peas to turn it into something more substantial. It's so much cheaper than using a cooker and I put it on overnight when we have cheaper electricity. Just need to remember that it doesn't reduce liquid.

I do think slow-cookers are at their best when cooking meat. Veggies don’t really benefit from long slow cooking and are much better cooked for as short a time as practical, depending on the veg.
You’re clearly not a vegetarian or vegan?

The OP was looking for one pot veggie meals . I have used my slow cooker for 40 odd years and have not got a single one pot meal unless you call soup one. In a SC I had many years ago I used to make risotto but it does not work the same in my newer one but worth a shot.

I would have thought that by cooking vegetables in a slow cooker the nutrients would be destroyed and the vegetables would lose their lovely fresh crispness. I only use my slow cooker for meat dishes.

That’s not the case GSM. Slow cooking doesn’t destroy more nutrients, apparently the lower temperatures may actually help preserve nutrients that can be lost when vegetables are cooked rapidly at high temperatures. I’ve made some lovely vegetable curries, and soups and casseroles with loads of vegetable in over the years, and they retain their flavour too.

I find that veg in casseroles lose the nice crispness you get with steaming. Just personal preference.
