Slow cooker one pot meals

I have seen the good suggestion that we use slowcookers more. I have also seen Jamie Oliver's One Pot suggestions.

So can we discuss simple one pot (slow cooker pot) recipes?
I am trying to greatly reduce meat in my diet, so veggie dishes which can be a meal are a good idea.

I'll put my thinking cap on, but meanwhile - what do you like or suggest as a one pot slowcooker meal?

Floradora9 I think thats a good point. The dishes will often need a vegetable / potato / bread to add.

Recipes using chickpeas are good if trying to reduce meat in diet. They have lots of protein and tastier than beans or lentils. The tinned ones are handiest and very cheap.

GSM, it’s easier just to buy measuring cups.

I think slow cookers are great for making apple butter, tomato sauces, soups (I like French onion, butternut squash, or sweet potato), risotto (although I have a 15 minute microwave recipe I use more), and stews/casseroles as others have said.

I think root vegetables are fine cooked in a slow cooker and long cooking means the cell walls are broken down releasing beta-carotene, eg in carrots, more easily. The cooking water is used and not thrown away too, which it often is with other methods eg boiling.

I'll search for my so far unused slow cooker recipe book tomorrow.

We love mushroom masala curry, serve on rice.

Mango curry, without chicken, with sauteed tofu instead.

Cooking with American measurements is easy.

A cup in liquid is just under 240ml

Most of us have a variety of mugs or glasses that are about that... find one that holds 240ml and hey presto, you have a cup for cup measurements

I think a cup is few ml less but it doesn't matter

Why miss out on amazing recipes when it's such an easy solution

I bought sets of measuring cups and spoons in, dare I mention it again ? TK Maxx. They were inexpensive.

If a person cannot or will not. They can skip over the suggested recipes can't they?

I really like the humble old pea in my dishes. smile
I like all the different ones, tinned, frozen, mushy, fresh, marrowfat, sugarsnap.
I haven't got a recipe, I just felt like saying.

Nothing humble about an early summer pea picked fresh and cooked immediately. Food of the gods!

We were in a restaurant yesterday and I was watching a less than a year baby sat in her high chair - mum was giving her a variety of finger food but she ate every pea in sight ignoring everything else, and sat arms outstretched waving her hands as babies do asking for more?

Cook a ham hock or two in the slow cooker with root vegetables, onion and celery. Keep the stock, strip any meat off and add split peas with a potato or two to thicken, cook on low for a few hours, pea and ham soup.

This has positively made me look forward to winter!

It's worth bearing in mind that UK and US cup sizes are slightly different. But if you do all the weighing using the same cups the ratios will be the same.

I use loads of US recipes - I weigh everything the first time I make it (ie weigh a cup of flour) and write up the weights so next time I make it I can just use weights.

I ditched my old slow cooker for a KingPro electric pressure/Slow cooker.

I eat very little meat and can do a Mediterranean vegetable pasta dish in seven minutes. The quick sauté function browns ingredients first and can also be used at the end if you need to thicken the sauce. Only having one pan to wash up is a bonus!

It also does quick casseroles, (or slow cooked ones if you prefer) risotto and wonderful soups.

It’s my most used kitchen gadget especially now we’re all looking to save on gas and electricity.

My electric pressure cooker is amazing! I recommend getting a 7 in 1 when it comes time to replace the slow cooker.

My original, basic slow cooker cooks more slowly than my Onepot pressure/steam/slow/bake - everything cooker. Both are in regular use.

A favourite is vegetable chilli with gram flour (chickpea flour) dumplings - lovely cold weather food. I tend to cut the veg a bit smaller to save on cooking time, as things keep their shape well and don't go mushy.

You really have to try the slow cooker chocolate pudding too!

I do think slow-cookers are at their best when cooking meat. Veggies don’t really benefit from long slow cooking and are much better cooked for as short a time as practical, depending on the veg.
You’re clearly not a vegetarian or vegan?

I agree. As with a pressure cooker, a slow cooker is best with meat - the heap, tougher cuts. Veg and fish take such a short time the conventional way or in the microwave, it's not worth the effort of hauling out the slow cooker or the pressure cooker. The longest job is the peeling and chopping which is the same whichever method you are using.
