Slow cooker one pot meals

I always find that chilli comes out well in the slow cooker.
Half and half with beef and lentils, then throw in anything else you have knocking around.
I use puy lentils, because they have a nice texture.

I live on my own and my slow cooker is large enough to produce a meal for tonight, and tomorrow and there is usually enough left over for 2-3 more meals so I freeze them for the times I cannot be bothered to cook.

I am not very adventurous so it would be casseroles or curries. If I am cooking one meal I may as well cook 5 or 6 and save energy.

I have seen the good suggestion that we use slowcookers more. I have also seen Jamie Oliver's One Pot suggestions.

So can we discuss simple one pot (slow cooker pot) recipes?
I am trying to greatly reduce meat in my diet, so veggie dishes which can be a meal are a good idea.

I'll put my thinking cap on, but meanwhile - what do you like or suggest as a one pot slowcooker meal?
