What to do with a chicken breast?

Please can you give me some more interesting ideas to do with a chicken breast? All I ever do is cover them with Parma ham or pastrami and roast them. DH wont eat cream so some sauces are out.

One between dh and me in a stir fry, with plenty of whatever veg I have, a packet supermarket S/F sauce, with added garlic, red chilli and ginger pastes, and a little lemon juice. With noodles.

And a mulligatawny main meal soup, v nice and warming in winter. Sauté gently a chopped onion, carrot and 2 sticks of celery in oil for a minute or two, add a dessert spoon of curry powder (or to taste), sauté a minute or to more, add plenty of chicken stock, simmer 20 minutes, then add 4 good tbsps of rice, bring to boil and simmer until rice is done, then add the chicken, chopped small, plus a chopped small apple (unpeeled) or half a large one, bring back to boil and simmer another 5 minutes.

Finely slice chicken breast and marinate it with 1tsp five spice powder and soya sauce.
Stir fry it with some onion and 2 cloves garlic.
Remove from pan and quickly stir fry cabbage or silver beet or broccoli.
Return meat to wok and add a bit more soya sauce. Serve with rice

My cousin used to cut a slit in the middle, insert some mild cheese, dip them in flower and breadcrumbs and egg and then deep fry them. Yum. Tasty with a salad and chips.

I slit it and fill with garlic & herb Philadelphia, then bake it on a bed of sliced onions & red peppers.

Slice the chicken breast thinly wok or fry with onion and mushrooms add Sugarsnap peas and sweet chilli sauce and garlic and soy sauce then add cooked noodles add more soy sauce. Delicious

Cook it plain and put it on a plate with some veg. Serve it to someone who likes chicken. No need to 'mess around with it'.

This made me smile as, once upon a time when I worked more than full time & DH less so, he said he was going to write a series of cook books, beginning with " what to do with a pair of breasts"! Alas, he never got round to it so I can't recommend it! I now never buy chicken breasts, only thighs, as they are not only much more flavoursome but also cheaper.

Dip it in egg and then in breadcrumbs, add salt and pepper then fry gently in oil or butter, as you would any other piece of meat.

Or cut into very thin strips, and cook in a wok or frying pan, add soya, brown sugar and vinegar to taste, then stir in a suitable amount of frozen stir-fry vegetables. Serve with boiled rice.

Most chicken is bland and the consistency of damp cotton wool. If I were trying to make it taste better I'd marinade it for hours in soy sauce and miso paste before whatever method of cooking.

I get the North Indian style curry powder from seasoned pioneers it lasts for ages only need a traspoon and cook up with garlic ,spinach ,Onions and cubed potatoes . Although I mainly get thighs must admit .

Stir fry with selection of veg and curry sauce added. I like the Aldi selection with separate dry spices to add first.

Paella.... add raw chicken in cubes toward end of cook time to poach gently in steam with lid on pot.

Find Tandoori spice mix, Jalfrezi spice mix, Korma ditto - and the rest necessary to follow the recipe on the jar. Enjoy a few curries like this. Chicken with mushrooms and any flavour (maybe not soy). You can use more or less of the spice according to you preferences. Add rice of your choice, poppadum, mango chutney.

I stopped buying chicken breasts in favour of chicken thigh fillets. IMO they are less inclined to be dry, and are very versatile and quick to cook. I find they have more taste too. Lots of recipes available for them too.

I have just fried up some cubed chicken with onion and garlic. I chucked in all the leftover veg from the fridge, all cut to bite size chunks. Meanwhile I cooked a pan of pasta. Combined the meat, veg and pasta in an oven dish and stirred a tub of Herby cream cheese through. This will have grated cheese put on top before I brown it in the oven later.

Chicken breasts in an ovenproof dish sitting on crushed garlic cloves. Season with black pepper, then cover with sliced mushrooms and a knob of butter. Roast for 30 minutes.
Make a roux with plain flour and cup of white wine. Add juices from roasting, milk and cheese. Pour sauce over chicken and grill to brown.
We eat this with plenty of greens and it is delicious!

Slice into strips roll in milk/egg then breadcrumbs and fry. Stir fry strips with some peppers / mushrooms In soy sauce and have with boiled rice. Flatten between cling film then crumb as above and fry in oil and knob butter schnitzel style. Cut into pieces brown a little and put with tomatoes/tinned and dried or fresh herbs seasoning /mushrooms and serve with pasta. Just stir fry in bit oil with lots pepper and. It of salt serve with chips! Lots of stuff to do with chicken roasting probably the worst thing to kill it's flavour and texture!
