Please can you give me some more interesting ideas to do with a chicken breast? All I ever do is cover them with Parma ham or pastrami and roast them. DH wont eat cream so some sauces are out.

Go to BBC food , there are 350 recipes for chicken breast.
I put mine in the Remoska with a tin of tomatoes and lots of different flavourings (e.g. basil etc.) plus some vegetable (e.g. asparagus, broccoli etc.) and a handful of dry pasta. Close the lid and switch on and bingo you have a meal - enough for two days for me.
Fry on both sides, cover with tomato sauce with some chopped basil in. Add slices of mozzarella, sprinkle with parmesan, drizzle with some olive oil. Bake.
Got an idea that's a BBC recipe too.

Make an incision to hollow out a pocket and fill it with garlic butter, or wrap a piece of Gruyère cheese in a thin slice of Parma ham and place in the pocket. Dip in flour, egg and seasoned breadcrumbs and shallow fry on both sides until cooked. If you whizz up your own breadcrumbs in a food processor and add some oil to moisten the crumbs, you can cook the chicken in the oven and the crumb coating will be just as crispy. You’ll never eat shop bought chicken Kiev again. I also like a chicken breast stuffed with your favourite stuffing, wrapped in bacon and roasted.
I think I’ve posted before about Sainsburys Sage and Butternut Squash bottled sauce. It’s really nice and if you’re not keen on creamy sauces this works well if you seal a seasoned chicken breast on both sides with a few mushrooms and shallots, then pour on the sauce and simmer until the chicken is cooked through.

I’ve done something similar using a tub of Tesco fresh Arribiata sauce. Really nice served up with buttered wide ribbon noodles - pappardelle I think they’re called.

Dip in seasoned flour, then dip in beaten egg, then cover with breadcrumbs.
Shallow fry in butter and olive oil (75%-25%)
Squeeze of lemon juice on servings

I rub with spices and bake in oven served with onions, lots of bell peppers, small tomatoes drizzled with oil, can add cubes of potatoes.
That chicken schnitzel is lovely with capers sprinkled over the top.
I love capers.
Rub in some spices such as Middle Eastern, drizzle a little sunflower oil and bake.
We cook chicken, when our non-vegan children are round.
I soak (chilled) a few hours in water to cover, with teaspoon of salt and sugar in the water. Pat dry, dip in milk, dip in salted flour, dip in egg, dip in peppered crumbs - all in that order, fry in butter. Serve hot, on rice or polenta.
Chop it up and make soup. Add various vegetables and perhaps some barley. Make/buy some nice bread. Scoff. It'll go further that way too.

I just came back to offer that recipe, Gg. I also add grated parmesan to the breadcrumbs.
I batch cook tomato sauce quite often but am not above using a tub of sauce too pammie but with fried potatoes rather than pasta.
Slice through the breast then coat the four pieces of chicken in flour. Fry the chicken on both sides then add honey, soy sauce, vinegar, and garlic to the pan. Simmer until the sauce thickens. Turn the chicken over to coat in the sauce. Serve with whatever you fancy. Delicious.

I marinate flattened chicken in yogurt or, at a push, milk for 30 mins or so before coating ang cooking as that helps to keep it moist.
How about garlic chicken ? For the marinade, squash the cloves from half a bulb of garlic until a paste. Stir into some thick greek yogurt along with the juice of half a lemon and a tablespoon of chopped fresh parsley. Add a couple of finely chopped spring onions and a red chilli - I leave the seeds in but it depends on how spicy you like things -stir in to the yogurt. Season the chicken on both sides with salt and black pepper and make 3-4 deep slashes into the flesh. Rub some of the marinade into the flesh and then place the chicken in an oven proof dish and cover with the rest - you want to just cover the chicken. Leave for at least 2-3 hours to marinate and then place in a hot oven for about 30-40 min until the chicken is cooked through. I baste half way through and turn the chicken over so that it gets evenly covered. Good with new potatoes and a green salad.

I don’t think you can beat a home made tomato sauce. Not so long ago I discovered San Marzano tinned tomatoes. They’re a bit pricey but they make beautiful home made sauce - so versatile. I found them on Amazon - trays of a dozen are cheaper if you use regularly.

I'm with you Hetty58 chicken breast is so boring and bland. If I have to eat chicken give me a leg any time.
Soak chicken, chilled, in water to cover with 1t salt and 1t sugar. When ready, pat dry, salt, pepper, coat with mayonnaise, roll in grated parmesan, bake until done. We serve with rice, salad, sauteed carrots (a daughter favourite).

We prefer thigh meat to breast. Cheaper and tastier.
Dice, add chicken seasoning and cook. Serve with salad in pitta bread.
I do chicken (usually breasts) once a week. Never thought of them as bland, I love the flavour. There are so many recipes out there. You can cook them Indian style, Asian style, Mediterranean style etc.
Thank you for all your responses and suggestions. I do of course know that there are many recipes on the internet and I have many many cookbooks but its helpful to hear what someone has done many times themselves with success so thank you. I will be trying some of these very soon.
