What to do with a chicken breast?

Please can you give me some more interesting ideas to do with a chicken breast? All I ever do is cover them with Parma ham or pastrami and roast them. DH wont eat cream so some sauces are out.

Stir fry, risotto, curry, chicken and mushroom pie, stuff with cream cheese and herbs wrap with streaky bacon and baked on a bed of cherry tomatoes with garlic, chicken cacciatore , make your own Kiev’s, lemon chicken on a giant couscous salad,

Go into any supermarket and look for Maggi sachets, they are usually with packet mixes and herbs etc. I use them all the time, there are many flavours to choose ftom, garlic, herb, peri peri etc all using chicken breast. The chicken breast is always very juicy and delicious, also very quick and easy to do.

Give the hen a funeral in the back garden? She has no name so choose a pretty name for her. Say a prayer, read a poem, sing song, seek forgiveness for having had her murdered and her life cut so very short. Mark her grave with your tears.

My fake Nando’s is always popular. Do a mix of chilli powder, smoked and normal paprika, garlic powder, salt, pepper, dried herbs, whatever you have to hand.
Thoroughly coat chicken breasts in mix, grill for 10/15 mins, depending on thickness, turning often. Slice thinly.
Mash up a ripe avocado, add cayenne, salt, pepper.
Serve with yoghurt, pittas or flat breads, any salad you fancy. If you can get flatbreads open, compile inside. Delicious, but messy! Otherwise just pile it on a plate.

Marinate chicken in spicy sauce. Chop onions, peppers and mushrooms, add all ingredients to wok or saute pan. Add taco seasoning and tomato salsa. Cook til chicken cooked and vegetables are soft. Warm some stand and stuff taco shells and fill. You can change your fillings as you like and or add cheese to top.

So many great ideas here! Thank you! But if was cooking for that hubby I’d do the Chicken Schnitzel from GravyGranny13 , with the grated parmesan per kittylester. Yes, add capers on top too! It’s really delicious.

Line an enamel baking tin with a double layer of foil. Place chicken breasts on the foil. Cover with a good amount of Geeta's mango chutney. Drizzle with a little oil and cover with more tin foil. Remove the top layer of tin foil half way through cooking and turn the chicken breasts over. Delicious!

Marinate chicken breast in PiriPiri marinade sauce for hour or overnight. Heat olive oil in fry pan , cook chicken , when half way through, add extra olive oil with knob butter & chopped garlic along with small plum tomatoes, sliced mushrooms, with a good sprinkling of PIriPiri seasoning. Serve with basmati rice . Lovely.

Flatten out a small chicken breast to about 1cm thick, coat in paprika and mixed herbs ( I like smoked paprika) and cook in a little oil for about 3 minutes each side. Delicious with a salad.

U could use it as a filling for a pie or pasties. Add olive oil to a frying pan , soften a large onion , or leeks . Add a decent amount of mushrooms and fry until juices come out. Place in a bowl. Then add chopped chicken to pan fry until cooked.Add milk to cover and a stock cube simmer then add a teaspoon of cornflour let down in more milk. It will go in a lovely white sauce. Tip all this into bowl of veg . Make or buy a basic pastry. 200g plain flour, 100gmarg, rub together . Add tiny amount of cold water to bind together. Let pastry rest while filling cools. Oven temp 175, while u roll out pastry. U can roll a rectangle and pile it all on . Line a pie dish or cut around a saucer and make pasties. This recipe helps a small amount of chicken go further. I find lots of people like pastry in winter. It’s a really economical way to use leftovers and store cupboard essentials. If the recipe is too long in one go rub flour into marg then freeze. It’s handy as crumble mix or add water for pastry.
