I've just cooked cheesy-breadcrumbed Basa, with sweet potatoes and oven-roasted Mediterranean vegetables. (It's a Gousto recipe I had ages ago) Gorgeous.

A large mixed salad, including pasta. Hard boiled eggs (cooked in the Ninja air fryer) and Moroccan houmous. Chili, lime and coriander dressing.

Big fan of Quiche .. I usually prepare a Swiss Gruyère & Spinach or a Lorraine.

As winter has returned to North Leicestershire, we are having potatoes, sausage and cheese oven bake thingy. It has shallots, tomatoes and pine nuts too and is very comforting when the weather is upside down.

Our mainmeal of the day is at 14.00 - 14.30 called Menú del Día as we work professionally and live in the Madrid Capital. (Husband is Madrileño). Obviously, I am French.

Starter: A simple salad with Ventresca albacore tuna (jar) with a variety of green & red oak leaf lettuces and hard boiled egg sliced and tomato. Vinaigrette.

Main Course. Freshly baked Norwegian Haddock, called Gallineta in Spanish and Rascasse de Fond in French - with garlic, fresh finely sliced tomato, fresh parsley, sliced sweet onion and a grind of assorted Mediterranean spices.

Was perfectly prepared.

Dessert: We shared a bowl of season fruit - Green melon called Sapo in now in season and it was amazingly sweet.

We're having sausage and mash with roast vegetables; peppers, onions, garlic, courgette, tomatoes and mushrooms.
It's gone very warm again today. Should have planned a salad!

A substantial minestrone, with garlic bread if there’s still any in the freezer. Meant to buy baguettes and make some more today, but forgot when in Asda earlier.

Tomorrow a dd will be here, so it’s going to be cubed, marinated pork fillet barbecued on skewers, in pitta ‘pockets’ with salad containing lots of parsley and lemon juice, Cyprus style. Exceptionally yum.

Friday Evening: 09 / 06 / 2023 .. Tapas on a Terrace.
We had drizzling and stormy rain most of the week. So today was the 1st sunny day with blue skies.

Pulpo a la feira = Fresh Grilled Octopus with Smoked Paprika & drizzled with extra virgin olive oil and sea salt.

To drink: A glass of Galician Albariño.
