Parkin/Gingerbread recipe please!

Do you have a favourite Parkin or gingerbread recipe you would be happy to share? Something nice and spicy and sticky-ish would be good! I’ve looked online but hard to know how they would turn out. Also, if a recipe calls for oatmeal is it possible to substitute with porridge oats? Hoping some of you experienced bakers will be able to help. Thank you!

You will need to get gluten free baking powder.

If you have bicarb and cream of tartar you can make your own gluten-free BP

1 tbsp bicarb
2 tbsp cream of tartar

I double the amounts and stick it in an airtight tub. Without cornflour in it will clump a bit, so I just give it a good shake before using.

Ooh, that’s useful to know AreWeThereYet, I must add that to the recipe file. Hoping to make Whiff’s cheese rocks at the weekend, they sound perfect for a Natter and Nosh event I’ve got coming up.

My Parkin at craft group yesterday went down well. One of our members is from Yorkshire and she said it was perfect. Asked what was in it and said it's what her mom and she put in when she baked . Apple cake all went as well.
My daughter is vegetarian and this is her nut roast recipe and it's delicious. I eat chicken and Quorn but not meat and rarely fish.

1 tablespoon oil
1 chopped onion
1 red pepper diced
2 gloves of garlic. Or couple of squeezes out of a tube.
200g mixed nuts ,pecans,walnuts,+ cashew
50g ground almonds
75g chestnut puree.
50g soft bread crumbs
2 medium eggs
100,ml milk
100g cooked spinach chopped
Salt+ pepper
125g blue cheese crumbled

Oven 200° lined 1lb loaf tin

Fry in oil onion,pepper and garlic until soft.
In a bowl add mix , nuts , almonds ,chestnut puree,breadcrumbs,egg,milk,spinach and salt + pepper. Mix well
Put in half the mix into tin sprinkle in cheese fill with remaining mixture.
Bake 40-45 mins until golden and firm.
Can't be made the day before covered in cling film stored in the fridge.
Tastes lovely hot and cold.

Nigel Slater has aa lovely recipe. I make it a lot and get many compliments. It has stem ginger in it. Easy to find online, I would think
