3 tablespoons butter
1 onion, finely chopped
11/2 lb lean minced beef
1 small egg
1 tablespoon capers, drained and finely chopped
1/2 teaspoon paprika
1 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons white vinegar
2 tablespoons double cream
3 tablespoons very finely chopped beetroot
11/2 tablespoons vegetable oil
In a small pan, melt 1 tablespoon of the butter over moderate heat. Add the onion and fry for 8 minutes until soft.
Transfer to a bowl. Ad the meat, egg, capers, paprika, salt, pepper and vinegar. Mix well with your hands. Moisten with cream, stir in the beetroot and shape into 4 large round patties.
In a large, deep frying pan, gently heat the remaining butter and the oil. Add the patties and cook over moderate heat for 7 minutes, or until deep brown on the outsides.
Remove from the pan, drain on kitchen paper and serve.
