Using an actual combination should cook the middle and bottom and brown the top. That's the whole point of the combination cooker! Check the handbook for suggestions.
I used to have one, but now only have one with grill and microwave, but I still have the book from the old one. (My son took the oven to Berlin with him and still uses it. No point in him having a handbook!)
I have just checked that hand-/recipe book, but being German, it doesn't mention pies. Germans just don't do pie. The nearest I can find is apple strudel. The recommended cooking setting for this is 25-30 mins at 180° + microwave on a medium setting. The recipe uses 250g flour.
