Got home today to find a pack of 4” ready baked pastry cases on my doorstep. My neighbour was going to use them to make lemon tarts for a Natter and Nosh we will both be attending but has thought better of it and passed them to me. Now our ‘do’ is very much a finger buffet so filling them with crème fraiche and berries won’t work and my mind is blank. Can anyone suggest a firm filling I can use so that the tarts can be cut into small pieces?

Ivanhsndyhemback, that’s an idea. So many of the suggestions would involve baking the pastry cases a second time and I don’t think that will work. If it would there’d be no problem.

Fresh raspberries or frozen well drained. Double cream and sugar. 3 or 4 spoons of raspberry jam
Beat a few of the raspberries in a small bowl. Whip Double cream and sugar. Fold mushed raspberries into cream in swirls ie not completely mixed. Fill pastry cases with cream mix, level put in fridge to firm up. Put fresh or frozen raspberries on top. Warm jam and cool slightly then spoon over top as a glaze. Put in fridge until needed.
