Anyone else making 🎃 soup today? Waste not, want not….

It wasn’t a very big pumpkin, but I have a mega pan of soup simmering away - with chicken stock, onion, garlic, ginger and red chilli pastes, plus the remains of a swede, and a potato.

There was half a pack of block coconut cream - a bit dried up - in the fridge, so that’ll be going in before I blitz it.

Looking forward to a late-ish lunch!

I read recently that the large carving pumpkins sold are largely watery, stringy and have little flavour.
My cousin has just offered me a Turban Squash to.cook it’s massive it cost her £16! I don’t really want it as I think it will be tasteless. Also the thought of chopping it up puts me off.

Perhaps add carrot as well? Nice flavour/sweetness.

I’ve always found that they* make perfectly nice soup, 1summer - of course they do need a lot of extra flavouring. AFAIK even the pumpkins grown for eating need a lot, too - very bland otherwise.

*I never buy a very big one, though - maybe the size makes a difference.

Sounds nice. I make soup on a regular basis - I've just finished the broccoli, cauliflower and Stilton which I made the other day.

I made pumpkin soup a few years ago.

It was awful.

Since then I have stuck to tomato, cucumber, courgette, leek and potato….

Split it into wedges and roast with the skin still on 1summer, you can then just cut the flesh off. If you rub it with olive or rapeseed oil it will brown nicely, adding some flavour.

I will be making pumpkin pie out of ours - Delia Smith recipe - its delicious !
Also will use any other remaining pumpkin to make dog biscuits for our pooches as its really good for their digestion.

We love a good soup for lunch when it’s chilly.
Made pea and mint yesterday ( excess went in the freezer). Today I discovered a bag of parsnip at the bottom of the fridge. Now have a batch of spiced parsnip soup to enjoy.

I grow Turks head squashes, not as big as the one you have , but my smaller ones are quite tasty.

I usually hollow it out and mix the flesh with sausage meat or other suffing and place back inside and bake it.

I did this to a small one when we had vegetarians with us on Christmas day. I stuffed t with a sage and onion stuffing, put it on a serving dish and put an ivy wreath on the plate. it looked very festive.

When we have left over cooked vegetables they go in the freezer and are very handy for making a hearty soup for lunch. We hate wasting food so this is a good way of using up leftovers.

I made pumpkin soup from a carving pumpkin ( brought home by disabled son from an event) and was’t as nice as butternut squash soup - but all got eaten. A lot easier to shop up than most squash.

Bought a soup maker, although a faff to clean, it makes brilliant Chucky or creamy soups- always a jug on the go.

I make soup every Sunday, and it is our lunch for the week. DH always likes meat in his soup. This week was turkey and rice, with leftover turkey from Thanksgiving.

Pumpkin can also be used in cake and loaves, which I like. Plenty of recipes on-line. I find I don't like the texture of pumpkin pie.

I always put an apple in my soup. It just adds a bit to the flavour. But would welcome advice on what herbs to use?

I love most squashes but find the carving pumpkins tasteless.
I make squash with a cheese sauce, soup, roasted…. When 8was a child in the Seychelles, some weeks had squash 6 days out of seven, but that was in the late 40s early 50s.

I have homemade lentil and whatever soup every lunch all year round. The whatever is whatever veg I have in ..I make enough for 6 lunches. The soup I have at the moment is red lentil and haricot beans. Flavoured with veg Oxo and mint . I always blitz it and store in the fridge in large plastic box. I can't cook fresh everyday as never know how I am going to be . Same with my dinners enough for 6 usually a stew sometimes a lasagne or pasta bake..Don't eat meat but use chicken or Quorn mince,chicken pieces or sausages. My breakfast is always porridge . It's means I get healthy meals cooked from scratch and it's how I lost 7st . Been trying to lose the last stone for 3 years. But one day I will.
