Far too much cooked turkey breast.

In readiness for Christmas I purchased a very large turkey breast from a cottage farm shop. At the time I wasn’t sure when my dd and dog were coming and for how long. Their turkeys are reared on their farm and are the nearest thing to the taste of the turkey we had in the “old days”. I wasn’t thinking clearly as having to buy it when someone took me by car and I was not in fine fettle due to a recent fall I had had.
Now after cooking and realising that half of it isn’t needed I have to freeze it. Should I freeze it in a couple of pieces or slice it and put it in bags. It was expensive and don’t want to waste it. Will use some today and probably tomorrow. After that will want something different.

We hadn't any sprouts left, so no bubble, but some buttery mash with the cold turkey & pickles is the plan for tonight.

We usually go to relatives for Christmas but when we don't I like to freeze left over turkey in a bechamel sauce preferably with added mushrooms or sweetcorn. I can then just defrost and pop some cooked flaky pastry (taken from a roll I keep in the freezer) on top for a quick meal.

I'm with everyone else here, nothing goes to waste. With me, hot , cold cuts, curry, a goats cheese, turkey, ham, cranberry sauce , pecans flan, a turkey and ham pie (courtesy of Jamie Oliver) and last but not least from the bones, Turkey Soup.

Just freeze everything you will be fine and have something to look forward to in the grim month of January.

I would slice and put into portion sized bags

I made a Christmas pie yesterday with leftover ham, turkey, veg and stuffing. It made us all fart

I usually freeze a few slices in a little gravy for a quick meal in a freezer box, and then cut the rest into chunks that can be used in curries or other sauced dishes. If you freeze the chunks first then put them together into a bag or box you can just take out what you need.

I was given the remains of a turkey crown and after we’ve finished the meat I intend to make stock and then chestnut soup, a real treat for another day .

I would slice it and portion it, freeze it in some kind of gravy/stock and take out as you need it

Its perfectly safe to refreeze a frozen turkey once its been cooked!

Yes, it is.

Freezing in gravy and thoroughly reheating is probably best but I'm sure slices frozen just as they are will be fine.

I'm using up some cooked turkey by putting it all into my Crimpit along with other odds and ends of stuffing, ham, cranberry sauce and assorted cheeseboard remains! Who knows what it will be like - hopefully tasty!

My DD brought her dog over on Christmas Day, who helped eat some of the turkey, but we’ve still got enough stored in the freezer for another dinner for 2/3. My family don’t like cabbage or Brussels sprouts so no bubble and squeak here, which I miss so much.

I love bubble and squeak too and have frozen cabbage before now; it was intended to go in stirfrys but I made some into bubble and squeak.
If you slice or shred sprouts then freeze that would work too I think.

Well it’s all stored away. Weighed the slices into half pound packs. Wrapped in greaseproof and then in large plastic freezer bags. Rather fancy a nice turkey and bacon pie in a week or so. Then a curry. Perhaps a stir fry etc etc.

I just freeze all the spare turkey, in layers with poly tish between in a big plastic box.

Over the next few months whenever I fancy any chicken dish, whether it requires raw or cooked chicken, i will use turkey instead.

i have never cared for the breast meat of turkey or chicken and much prefer the leg, or chicken thighs for curry or just with rice or whatever. When it ended up with just my husband and myself, we used to have a treat of roast beef and yorkshire and all the bits. at christmas . Then we are popular guests, as friends say with a rather wistful air, would you like a turkey sandwich , and their faces would brighten as we said yes please!!. I would make some curry with plenty of vegetables and then freeze that. Cut up some into small cubes and freeze that and then you can make a good stir fry. I do usually cook my own brown rice but I keep in one or two packets of rice, that I buy when they are on offer, so if you are very weary, you can just do the rice in its packet with the top taken off, in the microwave. In the meantime my usual basics for any sort of stew or stirfry is an onion sliced thinly and in a small amount of oil , sometimes rapeseed and sometimes olive , then add thin sliced pepper, celery, and then your turkey and some sliced mushrooms. I would add from my cupboard a little mixed herbs, some sweet chilli sauce and if there was any jelly from the bird add that in . voila! A quick lunch, and the good thing is that you may use similar ingredients but get a totally different flavour. So the usual curry addition to the turkey will give you another possibility . Also , was there anyone amongst your friends or neighbours , who you know , through illness or whatever, didnt have a christmas dinner? You could invite them round for a simple meal, so you might have made some good homemade soup, and then you could do lovely warming jacket potatoes served with cold turkey, pickles and coleslaw , and follow that by something simple, not christmasy, so to go with easily organised meal I would choose to make an apple crumble, using half porridge oats and half flour - this stops the top being "claggy" and I add a very little cinnamon to the crumble top. Hope that gives you an idea , but next year , might you think what would really give you pleasure and not go with the norm? I love lamb, but it has been so expensive havent had any for ages. Tesco had an offer for lamb to be half price with a tesco clubcard. So that was my christmas dinner, with roast potatoes, onion and parsnip, peas, cauliflower and of course gravy and mint sauce. I t was lovely, and cooked well adn I really enjoyed every mouthful. Good luck with your experiments

devoured the entire turkey by Boxing day .
So on 27th I'd be cooking a new dish .
My mother in law used to eke out a turkey until New Year's Eve .
She cut the whole bird up and some was served cold ,some reheated with gravy and the rest was either served in a curry sauce or a cheese sauce .
The meat portions were very small.
Ì have to admit not really enjoying the food at her house .. She preferred sweet things and wasn't that interested in savoury food nor cooking .
I admired her economy .
The curry and cheese sauces weren't bad -certainly both used up turkey leftovers !

Roasted - scoffed
Leftover buffet - scoffed
Turkey and sweetcorn chowder - frozen
Turkey, ham and leek pie - frozen
Schezuan chilli turkey stirfry noodles - scoffed
Coronation turkey sandwiches - scoffed
Turkey and broccoli risotto - frozen
Stock - lashings for most of the above dishes

I never mind splashing out on a decent bird as we get marvellous value out it over winter months 😋

I am another who buys a big bird, top quality - and doesn't waste a scrap.

We had it roasted on the day, gammon on Boxing day, Christmas pie yesterday (all the left overs from the Christmas day meal in gravy with pastry). Meanwhile it has been scoffed in sandwiches and salads in the evening. Three days on, what is left is in the freezer in a big box and will be used up in various poultry dishes over the next few months, plus a big pan of turkey soup on new years day.
