Far too much cooked turkey breast.

In readiness for Christmas I purchased a very large turkey breast from a cottage farm shop. At the time I wasn’t sure when my dd and dog were coming and for how long. Their turkeys are reared on their farm and are the nearest thing to the taste of the turkey we had in the “old days”. I wasn’t thinking clearly as having to buy it when someone took me by car and I was not in fine fettle due to a recent fall I had had.
Now after cooking and realising that half of it isn’t needed I have to freeze it. Should I freeze it in a couple of pieces or slice it and put it in bags. It was expensive and don’t want to waste it. Will use some today and probably tomorrow. After that will want something different.

I love eating turkey sandwiches in the middle of January using meat from the freezer, or sliced and frozen in gravy, reheated for a hot meal with whatever veg you like. Or stir fry, soups etc.

I am wishing I had some today. Just watching Jamie Oliver using up fresh left overs but I don’t have any as I was with family.

Soon I shall be putting several small foil-wrapped packets labelled ‘turkey bits’ in the freezer. They will go in soups, stews, curries, a substantial mulligatawny soup.

But tonight we’ll be having some of the turkey heated through in the leftover gravy, with heated up leftover roast potatoes and pigs in blankets. Yes, I over-catered! Never quite to this extent before, though - we’ve usually had more Big Eaters on the day.

And there’s the gammon - we haven’t even touched that yet….

I would cut it into slices and bag separately.. Then you can easily defrost as needed

Was it frozen after you purchased it before cooking? I wouldn't freeze it again if that the case of you cooked it from fresh fine, why not do a combination of sliced and chunks, you can use the chunks in a sauce/ light gravy as a pie or in curry . Slices are suitable for sandwiches or a dinner.

Its perfectly safe to refreeze a frozen turkey once its been cooked!

Our turkey was bought frozen, cooked yesterday and any leftovers will be frozen again, as I’ve done for many years.
It depends what you expect to use it for Loveto I’ll freeze some slices for using like a roast, in gravy and some in chunks for curry or fricassee over pasta.

Thank you everyone. Will cut up and bag up in slices or bits for the freezer. Will use it up over the next two or three weeks. Of course bubble and squeak was meant for cold turkey. Thanks for reminding me. One more meal tomorrow then something completely different.

My first thought would be a stir fry. I am not a fan of turkey breast, I much prefer the legs but they have vanished off the shelves.

We bought a small turkey breast wrapped in bacon from our local butchers, plenty for two of us we thought. Sadly it has gone in the freezer as I went down with a horrible bug Xmas eve and couldn’t even bear to smell food!! Best laid plans….we will fish it out and celebrate on New Years Day instead with a recreated Xmas dinner. I know there will still be leftovers but will slice and freeze so we can have sandwiches or bubble and squeak teas!

I bought my first ever turkey crown this year and made the mistake of buying one that was far too big. I now have enough sliced in freezer bags for 6 roast dinners and 2 curries/pies.

I’m currently making turkey and ham soup - first simmered the turkey bones with veggie trimmings to make a stock, and then recommended the stock with the ham bone. I’ll sauté a couple of onions and leeks, add the stock and some carrots and parsnips and finally the cut up turkey and ham leftovers and make a massive pot of soup, which I’ll freeze in several plastic pots and enjoy through the winter.

If you have time, you could make various turkey-based meals (stew, curry, etc) and freeze them in portions, ready to defrost over the coming months. Otherwise, as others have said, slice or cube it and, again, freeze in appropriate quantities to use as and when you have time.

My DD brought her dog over on Christmas Day, who helped eat some of the turkey, but we’ve still got enough stored in the freezer for another dinner for 2/3. My family don’t like cabbage or Brussels sprouts so no bubble and squeak here, which I miss so much.
