I am a good cook but................. ........

I consider myself a decent enough cook and over the years but the one thing that beats me every time is bread.
My Mum and Mum-in-Law both made lovely bread and passed on their fool proof recipes and tips to me. Try as I might I just cannot do it. Once baked it has risen it looks like a loaf with a crusty top but the inside is doughy instead of soft and springy.
I am not asking for recipes, I waved the white flag a while ago.
Does anyone else have something they can't get right, food wise?

Jelly, it is my bete noir I even struggle with the cubes.

I can knock up a pavlova, most cakes, boeuf en croute, (or any other pastry involved dish) my Yorkshire puddings touch the roof of the oven, but jelly…

Soufflé has always defeated me Sabrina so on the rare occasion I try another, I rename them pancakes…🤦‍♀️

Pastry, of any kind! I don't know why. I spent happy hours with my grandmother learning to cook and bake, her pastry was fabulous every time. Mine, nope.

Thank goodness for the chilled cabinets and the pre-made stuff smile

Apologies Sabrina - Autoblyddywrongagain in action!

And again Sarnia 🤬

Choux pastry. I just can't do it

‘I am a good cook …. But can’t be bothered!

50+ years on cooking/baking (yes, back in the day - home made salmon quiches, Christmas cakes, scones etc) I’ve little to no interest in it all anymore! I no longer follow a recipe I just ‘assemble’ food on a plate eg. A pork chop, some jersey potatoes, sprouts, gravy. Good enough!

Ditto Sarnia.

Not many things me beat me cooking wise but bread is my nemesis. Whatever I do I get a house brick grin

MiniMoon Tue 06-May-25 10:43:17

I'm a pretty good cook and haven't been defeated by much, but I've never managed a good Christmas cake. They are either dry, or sad in the middle. I gave up trying years ago.

Sarina try this bread method. I have success with it every time.

I'm not great with pastry either. My mother always used to say it was because my hands were too warm - apparently you need cold hands to make the best pastry!

FriedGreenTomatoes2 Tue 06-May-25 10:51:05

I (used) to make great pastry.
Cold hands warm heart …. 😁

Salti Tue 06-May-25 10:51:25

I couldn't make edible pastry for years until I used the food processor. Now 5 minutes, perfect pastry.

teabagwoman Tue 06-May-25 13:15:15

Shortcrust pastry even though I always have cold hands.

Esmay Tue 06-May-25 13:26:03

I don't enjoy making bread .
I can make nan or chapatti - they are easy .
I can make any type of pastry and have devised new cake recipes ,but I don't think that my biscuits aren't that great - even the dog refused them so they must be bad .
Maybe when a recipe goes wrong I think that it undermines your confidence and you don't really feel like making another potential failure .

Yorkshire pudding. I accepted defeat some time ago and buy Aunt Bessie’s for the odd occasion - it’s not a regular thing here.
Ditto toad in the hole.

Llamedos13 Tue 06-May-25 13:34:57

I can’t make yorkshires like my mum used to make. Hers were all big and fluffy where mine only rise up a bit and are thick inside.I gave up trying years ago and just buy the frozen ones now.

Witzend Tue 06-May-25 13:36:12

My pastry is always perfect, but that’s down to my trusty old Kenwood Chef - a wedding present 50 years ago!

Beechnut Tue 06-May-25 13:54:14

I would never consider myself a good cook but I’m still here😂😂.
I made a recipe once called lemon liver. It was horrible even the cat couldn’t be tempted and she loved liver.

In the spirit of this post, I'd like to mention DH. Sine retiring he has taken up baking with great enthusiasm!!!!
He makes tons of cakes, scones, etc but they are all ruddy awful. Please make it stop. 🙃

Ilovedogs22 Tue 06-May-25 14:04:16

I think his awful baking has affected my ability to spell properly!🥴

Moonwatcher1904 Tue 06-May-25 14:06:23

I don't consider myself a good cook but I can rustle up a decent cake but not scones. I don't know why they end up like thick biscuits. My DH eats everything I put in front of him so my cooking can't be that bad. smile

lixy Tue 06-May-25 14:15:14

Grannygravy13 I envy your ability to make a Pavlova. I’ve tried a few times but they always ‘weep’.
I can make a decent loaf though even if I say so myself!

Rosti completely defeats me. I had a delicious one once in Germany and have been trying, and failing, to emulate it ever since.
