Sandwich filling suggestion?

I thought I'd try to ring the changes for yesterday's lunchtime sandwich. Bearing in mind the various health messages I seem to be bombarded with I came up with this:
Two thin slices of heavily seeded brown bread spread with soft goats cheese topped with thin slices of crunchy pears and sparingly sprinkled with walnuts. Press down the top slice, cut diagonally. It was absolutely delicious.
Any other ideas for tasty, fairly healthy sandwich fillings?

Did my own version of the new M&S sandwich for Wimbledon. Apparently that has lots of cream but mine was Philadelphia cheese on both sides of fresh white farmhouse bread and lots of sliced strawberries. It was delicious I had it two days running!

Beetroot Hommus ..
1 Leek
garlic to taste finely chopped
1 peeled potato - small
pistachios chopped finely
pita
1 tiny lemon
virgin olive oil
nuez moscada (spice ) - Nutmeg ( almost forgot )

Mix into a creamy consistency.
Serve with hot oven baked Pita or room temperature if you prefer

Would you add anything to Marmite in a sandwich or add Marmite to something else?

Peanut butter and marmite. Peanut butter and a trace of honey (put the honey or marmite on first or you can't sprad it evenly).

Thick slices of buffalo mozzarella (the kind that comes as a lump in a bag of liquid) with lettuce and sweet red pepper (long pointy sort) sprinkled with French dressing.

Has anyone know how to make the carrot chutney à la M&S ?
I love the Wensleydale and carrot chutney sandwiches but rarely find them .
Brie or Cheddar and grated apple is nice

Brie with cranberry sauce, and even better with some nice crisp bacon.
Chicken with some Hoisin sauce, crisp lettuce and cucumber. Spring onion as an extra, or even some thinly sliced peppers. Nice if toasted bread or in a wrap.

Crunchy tuna filling - tuna, small amounts of diced onion and pepper, sea salt/ground black pepper, dash of salad cream and then mayo to bind it all together. Serve it in a roll or brown bread.

Tuna & Apple - tuna mixed with a little mayo and/or greek yogurt and ultra thin slices of apple

Salmon & watercress/cucumber - spread the bread with a little mayo, put watercress or thinly sliced cucumber and flake some poached salmon

Tomato - very thin slices of plum tomato and salt/herb salt and pepper

I remember my mother splitting a long french stick and lining it with tuna mayonnaise, sliced hard boiled eggs, tomato slices and lettuce. The two halves were tightly encased in a tea towel. On arrival at a picnic it would've sliced up and handed out. Delicious.

what a creative lot you all are! All sorts of suggestions there of things I've never have dreamt of putting in a sandwich.
I have to confess I really don't like the sound of the M & S strawberry sandwich though.................
my favvy has to be tuna with tomatoes any day of the week.

Oh yes. Cheese and onion crisps and mayo. Lovely.

No way could I eat fruit in a sandwich.
My mum used to eat an apple with a slice of brad and butter. Yuk.

Ditch the bread! You can buy lunch pots now with a fork mounted in the lid. Or boiled egg, scotch eggs, crudites - think finger food.

But if you cannot face that, my favourite is to spread with cream cheese OR salad cream (NOT mayo, ugh!) and thinly slice celery lengthwise - lovely crunchy sandwich. Strangely, old fashioned salmon spread makes a tasty base for a cucumber or salad sandwich
