Sandwich filling suggestion?

I thought I'd try to ring the changes for yesterday's lunchtime sandwich. Bearing in mind the various health messages I seem to be bombarded with I came up with this:
Two thin slices of heavily seeded brown bread spread with soft goats cheese topped with thin slices of crunchy pears and sparingly sprinkled with walnuts. Press down the top slice, cut diagonally. It was absolutely delicious.
Any other ideas for tasty, fairly healthy sandwich fillings?

Coronation chicken…….home made of course, not the supermarket pathetic effort. And made in advance so the dressing really gets 8th the chicken.

Similar try the goats cheese with sliced beetroot one of my favourites.

Ooh thank you some great ideas. I’m a bit bored with sliced cheddar cheese in my sandwiches and as I don’t like meat I’m a bit limited on what I can put in them.
I go walking a lot so the filling needs to be something that won’t go off. Mashed avocado pear with cucumber and tomato in pitta bread is delicious

My favourite is Mozzarella, pesto and tomato.

Smashed avocado with gherkins and sliced beetroot (much nicer than it sounds).

Funnily enough, in an old Barbara Pym novel, set many decades ago, I read of ‘cream cheese and walnut’ sandwiches at afternoon tea!
I’d never heard of such a filling before.

Cheese and piccalilli or sliced raw onion in fresh pillowy but firm white sliced bread (bakers shop) this is my latest fad.

Others are sliced left over roast beef (in my dreams with *real dripping*) ditto as above for bread, but well seasoned, dab of Coleman’s.
M&S Wensleydale and Carrot Chutney (out and about treat when starvation threatens)
All followed with a cuppa (Yorkshire Gold or M&S Gold) 🫖
Don’t do so called healthy just nice and fresh in moderate amounts😋

Would you add anything to Marmite in a sandwich or add Marmite to something else?

Blue cheese and thinly sliced pear.
Adding seeds makes them crunchy, but DH had to visit the dentist after that, so take care.

Marmite, walnut and celery is devine!

Not a sandwich but a starter which was delicious.
A large pear halved and slightly hollowed out filled with cream cheese and topped with chopped walnuts
Also had them filled with Boursin, a nice change for lunch without the carbohydrate.

A wonderful cafe we used to go to did wonderful brie walnut and grape on granary bread. Yummy.
Got slightly excited this week when shopping online at Ocado. Apparently they have started selling my “ favourite” M & S sandwiches.
Excitement was short lived, limited selection. My favourite is Wensleydale and carrot chutney. Not had one for ages as our M & S has closed.
I do make my own too honest. I like cheese & coleslaw or if hungry ( rare) Richmond veggie sausages with red onion ( and ketchup if my husband is out, he hates it)

I don’t find it does especially in a seeded or wholemeal roll. Give it a go!

I recommend marmite and cottage cheese on Ryvita.
