What to do with too many chicken breasts

DH has lumbered me with 1kg of skinless chicken breasts when what I actually wanted was 500g of chicken thighs with skin on.
I'm minded to chop the whole lot up, stir fry and freeze most of it.
Any other quick solutions? It's all just for the 2 of us.

Chicken kievs , make breadcrumbs in blender , chop garlic, cream with butter. Slit side add butter . Then dip in flour then egg then breadcrumbs. These can be frozen raw or baked on a flat sheet. Great if avoiding gluten as we use gluten free flour and bread scraps. Nice quick tea from the freezer .

I am vegetarian so not very confident that I have good ideas to help you with this problem Flutterby... but I do keep noticing the thread title again and again.

Each time I briefly wonder what it means. This is because I read it rapidly as

I find a chicken breast usually does two of us. I freeze in twos. Once defrosted I use one for a stir fry or curry and next day use the other cut in two and wrapped in bacon.

I find that one is enough for the 2 of us now. I often chop one up small and stir fry it with lots of veg and noodles.

I freeze them in twos . That allows you to cook them however you want .

I freeze chicken breasts individually in plastic bags . And put them in a dish in the bottom of the fridge if I want to use the next day . They defrost overnight . I buy large ones.

I too buy chicken in bulk from Costco. I usually freeze them in twos but with a few single ones too in case we have company to cook for. I use them in various different ways. One simple idea when you have defrosted your chicken breast, remove any sinew, Make slashes in the meat and place in a tinfoil lined dish and cover with Geetas Mango Chutney. Put foil over the top and cook in the oven. Towards the end of your cooking time remove the top foil and turn the breast over to brown the chicken. We love them with baked potato but also nice with rice. Other recipes include stir fry, curry or we like to use chicken for kebabs. Sometimes just roasted and left to cool for sandwiches or chicken and chips and salad.
