Good morning,

Does anyone have a recipe, please, for Corned Beef Hash

I haven't made it for ages, but my recipe is as follows:

Chop and fry a large onion with some chopped mushrooms, if liked. Add chopped fresh tomatoes or halved cherry tomatoes and cook until the juice has run out and there is a sauce. Mash in a tin of CB, and a dash of Worcester Sauce. Season well. I add a small tin or a handful of frozen sweetcorn at this stage, but that is optional, as are the mushrooms. Set aside.

Meanwhile, slice and boil potatoes, and drain when cooked. Allow to cool a bit (until they can be handled without burning yourself).

Layer the potato slices and CB sauce in an ovenproof dish, and add grated cheese to the layers. Finish with a layer of potatoes topped with cheese.

Bake until the cheese is browned.

Pretty much all of this is customisable. As the potatoes are already cooked you really just need to heat it all through, but it tastes better if you have time to cook it for a long time on a low heat. It is also good after sitting in the fridge overnight and reheated (microwave is fine). It is also possible to cook it on the hob in a shallow dish or deep frying pan and brown the cheese topping under the grill when the rest is done.

My Mum’s recipe…

Gently fry onions, when cooked add corned beef, soften and warm through. Add a good squirt of tomato ketchup and a dash of Worcester sauce, pepper, (no need for salt as there is enough in the corned beef). Add either frozen sweetcorn or baked beans as is your preference, mashed potato on top (works so much nicer than the usual cubed potato). Top with grated cheese and put in the oven until nicely browned. DH woofs it down

My mum used to make corned beef pie and so did I. It was lovely. Very tasty. I don't eat red meat now and haven't done for a few years. The filling was corned beef hash I suppose. Cubed potatoes, chopped onions, fried together until cooked, then add cubed corned beef for the last few minutes to heat through. For the pie I would add about 1/4 pint of gravy mixed in and make it with shortcrust pastry. Never heard of making it with green peppers and I hate chilli, but if you like them, go for it!

Corned beef pie is very popular in South Wales ….all the supermarkets sell it.

We use a pressure cooker to cook our hash. Potatoes, onions and any veg you want or have odds and ends of. Oxo cubes or Bovril. Plus brown sauce to serve.

We had an old yacht and sailed for our holidays. In bad weather my corned beef hash was as follows. Slice an onion up and fry. Then use pressure cooker for safety and add 1 tin potatoes. 1 tin carrots, sweetcorn , celery water drained off Add 1 tin c beef cut up a little. Add gravy and I always had herbs and some marmite to the mix. Lid on and pressurised. That was so it didn't spill . 5 minutes and ready. Served in bowl. Hot and comfort food. We called it a boat dinner and any time you feel ill or with no idea on a cold day ,that is a go to, with only tins to open and not much to wash up! Of course you don't need the pressure cooker on dry land!

I boil potatoes and chopped carrots in stock until soft . Add diced corned beef and mix but not to a purĆ©e . season ….. simple! Serve with baked beans … yumm !!!!

Yes, it can be. I don’t eat it any longer……….after finding what looked suspiciously like a cows eyelash embedded in it🤮

My Corned Beef Hash is meant to be quick and cheap. Just mash potatoes with a bit of butter and an egg. Mash up a large tin of Corned Beef and add to the potatoes, then using a large frying pan smooth out to cover the bottom. When golden brown flip over and cook the other side.
