Gingernuts and Oreo biscuits

I have packets of these biscuits that nobody is keen to eat. I thought that if I made desserts with them they might be more acceptable. Does anyone have any simple recipes? The packets have been opened so I can’t donate them to a food bank.

I once made some ginger nuts and I've no idea what I did wrong but it was impossible to eat them even after dunking them. They were rock hard. We took a hammer to them in the end just from sheer frustration. Then they went in the bin 😂

Unused, leftover, unopened, surplus. Not adjectives that should ever be used with biscuits, cake or chocolate. Not in this house anyway.

Soak the biscuits in sherry, then sandwich with whipped cream in between each one, cover the log with cream and grate chocolate on top. Always a winner here

I think that ginger biscuits make a better crumb base than digestives.
I've beaten cream until double and dipped either type of biscuit in and used them in puddings .

If you make a “cheesecake” with biscuits crumbs it is NOT cheesecake. It’s a concoction made up of some biscuits mashed up and cheese, usually over sweetened and loaded with gelatine to hold it together. Cheesecake is baked; all of the ingredients are baked.

My recipe is for a No-bake Cheesecake 😊 it doesn’t have any gelatine in it. It’s made with a biscuit base and mascarpone is the main ingredient.
