Ideas for meals in this heat

I tend to do things like salmon, quiche, cold meat, occasional lamb burger, pasta all with salad and usually new potatoes, but I’m running out of ideas.
Any suggestions?

Well, I was getting a bit like that too, but yesterday I saw a recipe on TikTok for peach and burrata salad and I've just been shopping for the ingredients so we're going to have that for a change.

Not very inventive but I like salad, try differing your salads with adding croutons, chopped nuts, fruit pieces mange tout, chopped crispy bacon not all at once though 😂

Risotto perhaps?……..I know it has to be cooked but it is only one pan, potential to use up left overs and is tasty and nutritious.

Greek Mezze: Dolmades / Hummus / Taramasalata with Cod or Haddock ( Grey mullet is unavailable on our side of the Spanish side of the Mediterranean ) however, can use red mullet or gallineta.

Sushi & Sashimi delivered ..

Gazpacho or Salmorejo ( cold soup )

My standbys are
microwaved jacket potatoes with coleslaw or

couscous which just needs to be soaked in boiling water with lots of chopped up bits and bobs in it (tomatoes, olives, spring onions, sweetcorn, cooked veg)

Cheesy egg and spinach pie which can be eaten hot or cold. It has no pastry crust so quite easy to do. I found the recipe or it found me on UTube.

Spinach Salad

Greek Salad

Prawn Salad ( without shells ), avocado sliced in laminas, pistachios, lemon juice sprinkled lightly, Extra virgin olive oil, salt, spinach leaves & assorted lettuces.

Tayín of available white meat fish ( sea bass / cod / halibut / lemon squeezed lightly, salt and black pepper, spices to taste, garlic finely sliced and sweet Galician Onion and a little red ripened tomato ..

Old easy favourites.

Buffalo mozzarella (the shapeless lump kind) sliced and mixed with sliced tomatoes, crushed basil leaves and vinaigrette dressing, eaten with good bread and lashings of butter.

Halloumibabs - cubes of halloumi and of a thick heel of bread, threaded on skewers with bits of pointy red sweet peppers between the pieces, drizzled with a lemon and olive oil and grilled until the halloumi and the bread are a light golden brown.

Ham and cheese roll-ups - Squares of (inexpensive) ham rolled up round soft cheese into "cigars". Eaten cold with the fingers in the sunshine. If the weather turns bad, roll them in flour then beaten egg then home-whizzed breadcrumbs, and shallow fry them to golden in a little oil and butter, while a potato bakes for 6-10 minutes in the microwave.

I have cauliflowers that need harvesting - so tonight it is a recipe I found on BBC recipe site cauliflower pizzaroli I think it’s called. Cauliflower tomatoes herbs, garlic etc roasted with strong cheese. Might have either crusted bread or pasta with it.

Frenchgalinspain You're so lucky to have access to so much fresh fish. Here it's really only the people on the coast who can access it unless we buy it chilled or frozen from the supermarket, and there's not much choice. We have a fresh fish van that comes around once a week but his stock is very limited.

But now you've made me want some nice sea bass with a citrusy sauce over it.

We've just eaten a salad with fresh broad beans from the garden cooked and mixed with a minted dressing on a bed of labneh topped with cooked baby beetroot and walnuts. I added roasted cauliflower and the usual lettuce, tomatoes and cucumber. I also do a similar salad using hummus instead of the labneh.

Tabbouleh also goes down well on hot days. Mix cooked bulgar wheat with chopped cucumber, radish, red onion, sweet peppers, baby tomatoes and add a really punchy dressing with loads of herbs like mint and parsley etc. It goes well with any protein eg eggs, cheese fish, meat and you can put pretty much anything in the mix. I often add beetroot and feta and nuts (whatever I have to hand).

Apart from the shell fish (I'm allergic) these ideas are nice. I particularly like salads feta watermelon and fresh garden mint salad a favourite.

call me old fashioned, but I simply love an egg salad - hardboil a couple of eggs and then cover them with mayo, or mash them a bit and add some tomatoes - delicious in my book!
I've made lots of gazpacho in the very hot weather - v. easy to make again, and healthy - also made vicchysoisse. Both keep well in the fridge for a few days and lovely to have cool soup on a hot day.

Sounds like a frittata, I think this is a great dish for a hot day. Or a tortilla if you want something with potato in it so it is a bit more filling. Obviously you can cook it in a frying pan, though I'd usually do it in the oven, Personally I wouldn't want to put the oven on to cook it so might cheat and buy something, the hot weather won't last enough to bankrupt me!
I like simple cold sliced meat with a reheated frozen jacket potato or a bag of microwave rice, I'm cooking a chicken outside today so that we can have it cold for a couple of meals. Gammon is a good one too, as I have a pressure cooker so it's quick and doesn't warm my kitchen up too much.

It isn’t just about what to eat in hot weather it’s about minimum prep time too.
Various cold meats with either oven chips and a bit of salad, or ready bought quiche with ready bought potato salad and a bit of your own salad.
Omelette with Greek salad.
