Ideas for meals in this heat

I tend to do things like salmon, quiche, cold meat, occasional lamb burger, pasta all with salad and usually new potatoes, but I’m running out of ideas.
Any suggestions?

A very quick, tasty and nutritious meal for me is scrambled eggs with smoked salmon and avocado. Lush

we had this for brunch (with smoked trout actually)

I will cook two smaller chickens together then freeze one
so we have had chicken with a variety of grain and salad
for days, plus Mackie’s ice cream with soft fruit, cold soup,
iced coffee, couscous with bag of Waitrose Mediterranean vegetables mixed, with chicken of course.
I made a large flan with ready pastry, grated cheddar, frozen chopped onions, 4 eggs, at 5 in the morning when I couldn’t sleep, plus a large bowl of coleslaw, cabbage from the market
with small potatoes, salad and figs.
This isn’t how we normally eat but we have enjoyed the food
with minimum preparation or using the cooker/oven, crinkle cut chips in the air fryer, early morning toast in the toaster,
although, really, I wouldn’t want to be living like this over an extended period, Grans can rise to a challenge.

I’m not mad for avocado either Oreo, I do eat them sometimes as DH likes them, but to me they don’t taste of much and have an odd texture. Love a radish though!

I’m just doing chicken wings with a ready made pizza express pizza with salad 🙈 we still have an adult child at home though. Otherwise I might have eaten dust

Sorry it’s an advert but we’ve been eating meals from Wiltshire farm foods. Take out of the freezer, pop in the microwave for 5-10 mins depending what your having and dinners ready. No standing around cooking in this heat. Hardly any washing up either.

I live on my own and sometimes buy a small gammon joint from Lidl or Aldi …. I boil it initially and have it hot with new potatoes and veg. The next day I have it with salad and the day after that I have it with egg and chips and there’s still enough for a sandwich.

Another one here who detests avocado.
We've had family staying for the half term week and have cooked normal meals really. Small grandchildren somewhat averse to salad. (Or anything green for that matter 🤮)

the only veg i eat is lettuce, tomato and cucumber, but i add pickled red cabbage and/or diced beetroot, i could eat that every night with bread and butter, i do make baked potatoes, on a hot day i will make scrambled egg or toast and cheese, they are filling with a yogurt or ice cream for afters,

Tin of mackerel, sweet pickled beetroot, green salad and either some tinned butter beans, or bread & butter, or new pots. My go to, and ready in minutes.
