What is your favourite healthy vegetarian meal?

Hi everyone,

I've been trying to include more healthy vegetarian meals in my diet and I'm always looking for new ideas. My favourites include chickpea salad, vegetable khichdi, paneer dishes, and grilled vegetables.

What are your favourite vegetarian meals that are healthy, filling, and easy to make? I'd love to hear your recommendations and any recipes you enjoy.

Gosh so many nice ones. This isn't particularly my most favourite but it is the quickest one I know. Boursin cheese (garlic and herbs) plopped in middle of oven dish, surround it with chopped peppers/chopped mushrooms. Put in oven till melted. Meanwhile cook pasta......use a couple of teaspoons of pasta water into dish and mix in pasta and creme fraiche....or cream and wine.......mmmmmmm. Quick fix.

We have a gas barbeque and I often just switch it on....just to cook whole small peppers. Mmmmm. I could eat those till the cows come home. (sorry, I'm the meat eater, I just live with a vegetarian).

Pine nut tagliatelle…. Delicious, with mushrooms and onions added and pesto sauce, green of course.

I'm not a vegetarian, but I could quite easily become one, the only meat I really like is chicken I sometimes fry some Halloumi add it to cooked pasta and cauli, red onion courgette
or whatever veg I fancy, then add some cheese sauce

My go-to meals are pasta with tomato sauce/ratatouille, grated cheese.

Spiced rice with cashew nuts (from Madhur Jaffrey)

Baked potato with various fillings.

Unfortunately lentils give me tummy ache or I would eat more legumes.

I’m a vegetarian and eat veggie mince with passata and vegetables plus herbs stirred in with pasta, or smoked tofu stir fried with mushrooms and vegetables, again with the passata and herbs with rice. I am currently following the Slimming World plan and these are all free foods. I would just like to add that I don’t consider eggs as vegetarian, but I suppose my reason for being a veggie is because I find meat fish and eggs disgusting.

Definitely vegetarian lasagne. I love eggplant ,too. Eggplant chips are gorgeous, better than potatoes. Google the lasagne, they have a lot of varieties and not difficult.b

Another vote for vegetable lasagne! Hundreds of recipes online to choose from, but if you use dried lasagne sheets, make sure they have enough liquid to cook in.

I really dislike quorn, or soya, but i did find a frozen pack of some kind of mìnce substitute in the depths of my freezer that was really great.i don't know what brand it was.

As long as Sarnia doesn't consider fish as suitable for veggies ( I've had Drs who do think that) then enjoy.
I have adapted a Jamie Oliver recipe where he cooks aubergine with peanut butter, soy sauce , chilli sauce and it is served with coriander and rice. I believe Jamie cut his aubergine into quarters but I cut it into cubes.

Macaroni or cauliflower cheese 😋 basically anything with cheese! One of my favourite quick teas is grilled halloumi cheese with salad and sauces in a Greek style flat bread. My favourite sauces are Crucial Yoghurt and Mint or the Spicy one. Gnocchi roasted in the oven with loads of different veg, with lemon juice squeezed over and Italian hard cheese mixed in. Veggie Paella is also easy and tasty. I use a recipe from a Tesco magazine, but there are loads online. Veggie fajitas are also quick and easy. I use a ready made fajita spice powder mixed with the juice of a lime.

The easiest veggie chilli, and possibly the best is in a can, and made by Stagg.
Very simple to cook, simply open the can, pour half (approx) into a microwaveable container.
Serve on a bed of rice, or bung onto a buttered jacket potato with a large liberal amount of grated cheese on top. smile

Some great recipes, I will definitely try some of them. (not the salmon)

I like the occasional stir fry with Chinese vegetables and nuts.
I sometimes cook spaghetti with fresh pureed tomato, olive oil, garlic, black pepper and basil. I add parmigiano as I am not vegan.

Dhal with red lentils, coconut milk, curry spices chickpeas (chana dhal). I add tomatoes and spinach and sometimes roasted cauli. Top with toasted flaked almonds. Hungry now.

Menemen, which is Turkish scrambled eggs with peppers, onion and tomatoes. A bit like shakshuka, which is also another good option.

I love menemen, unfortuately me and eggs are not friends these days so it is a very rare treat now.

I also like soup and usually make a big pot and freeze leftovers as I live alone.
Sweet potato and coconut
Leek and tattie
Carrot and coriander
Jamie Oliver's tomato.

For special occasions I make an effort
Lasagne or vegetable wellington, nut burgers, quiche etc.
I avoid processed or ready meals and meat substitutes as much as possible though there are tins of braised tofu and beans in the store cupboard.

One of the very few things I will actually cook. Dried red lentils, sliced or grated carrots and chopped onions, vegetable bouillon. About 80g lentils to 1.5 pints water (might need topping up part way if too thick) Put all in a microwavable casserole dish and cook for 30 mins. Serve with bread.

At the moment my favourite veggie meal is aubergine chunks, chickpeas, sliced mushrooms and garlic. I fry the aubergine in olive oil, then add the mushrooms, then the crushed garlic and then the chickpeas to heat through. I like this with half a baked potato and some cabbage.

About once a week we have roast veggies, usually with rice. At the moment I can use home grown courgettes, small tomatoes and onions. In addition I use peppers and sweet potato and garlic through the garlic press. Everything is cut up small (except the tomatoes which I leave whole), stirred together with olive oil and some dried mixed herbs and seasoning, then put in a roast tin and cooked at 190 until ready. Need to stir a couple of times whilst cooking. We have this with grated parmesan cheese.

Strawberry risotto - don’t panic, it’s savoury - sliced strawberries added for last three minutes. Serve with asparagus sprinkled with olive oil & balsamic vinegar and grilled lightly.
