All real food is healthy - it only becomes unhealthy if we process it too much, add too much fat, sugar and/or salt and pig out on it day after day!
To answer the question (at last), my favourite is my DH's one and only dinner recipe, which started out as "Tuna Fiesta" (onion, garlic, mushrooms, red pepper & peas, all stir-fried in olive oil, with tuna and (listen to the groans) Campbell's mushroom or tomato concentrated soup stirred in at the end. When we turned veggie 40 years ago, he substituted the tuna with vegan chunks, which works beautifully.
Another favourite is a puff-pastry pie I fill with chestnuts, onions, aubergine & courgette antipasti, garlic, baby spinach, sweet mixed spices (which must include cinnamon), harissa and tomato puree. I serve it with roast potatoes and broccoli. It's very rich and doesn't freeze well, so I only make a small one as DH's birthday treat. The next day we have the leftovers cold and that's that for another year.
