What is your favourite healthy vegetarian meal?

Hi everyone,

I've been trying to include more healthy vegetarian meals in my diet and I'm always looking for new ideas. My favourites include chickpea salad, vegetable khichdi, paneer dishes, and grilled vegetables.

What are your favourite vegetarian meals that are healthy, filling, and easy to make? I'd love to hear your recommendations and any recipes you enjoy.

I m just a simple stir fry woman with whatever flavouring and veg I fancy thrown in I m a simple cook the simpler the better for me 😂

A family favourite (we're all veggie) is Lentil Lasagne.

Baked potato with a range of fillings - as healthy or as unhealthy as you like. pasta dishes with any mix of vegetables you like to add, I love Pasta alla Norma with aubergines, tomato and basil, risottos, made with different selections of vegetables, and different cheeses.

I could go on and on. No, I am not a vegetarian but I have always loved vegetables, so I am always ready to try a new vegetable dish.

Risotto style meal made with orzo (gluten free in my case) half stock half coconut milk, spinach ,peas, lemon zest and juice and a good sprinkle of parmesan or a sliced goats cheese log.

Chilli made with a variety of beans, meat free mince, peppers, onions, garlic, passatta, hot chilli powder or mild, smoky paprika, and salt to taste, served with a jacket potato or rice.

Italian Stuffed baked aubergines with onions, garlic olives, red peppers, mozzarella, breadcrumbs and Parmesan.

Vegetarian curries are really nice imo and even boring vegetables like cauliflower become transformed cooked in a curry. At an Indian wedding a while back, all the food was vegetarian as is the main custom in India. I've always had a preference for a vegetable samosa over a meat one, although neither are, I imagine, particularly healthy given they're deep friend.

Pasta doesn't always need a heavy meat sauce, thank goodness for Basil, lemons, Parmesan, cream, broccoli, Pesto, olive oils, any one or a combination, added to pasta can make a tasty meal

We're lucky now we can access so many spices that enhance vegetables to make them far less bland and most people have long since departed from the "boil them for ever more" school of cookery of the dim and distant past, where they lose their texture and in the case of broccoli, asparagus and other green vegetables no longer the vibrant colour they should be. Stir frying is also a great way to keep vegetables al dente.

Definitely vegetarian lasagne. I love eggplant ,too. Eggplant chips are gorgeous, better than potatoes. Google the lasagne, they have a lot of varieties and not difficult.b

I love veggie lasagne, prefer it to the meat version because the mince is usually not very good quality.

Menemen, which is Turkish scrambled eggs with peppers, onion and tomatoes. A bit like shakshuka, which is also another good option.

I am not a vegetarian bit do think any dish with mushrooms is always tasty.

Shak Shuka. A favourite breakfast option in the Levant. I use good quality tinned plum toms but you can use fresh. Fry the toms with onions and garlic and seasoning to taste in a large deep frying pan, simmer and then add several eggs over the toms, cook slowly and cover if you want the eggs to be cooked through, or not if you want the eggs runny.
There are many variations of this but this is how I have always done it.
Serve with crusty bread.

I like a picky tea from time to time. For me I would have lentil pasta, cherry tomatoes, watercress, cucumber and salmon. Tesco's Vivera range do a lovely salmon fillet. I would struggle to live without fish.
