How do I improve the quality of my pears?

The tree is an old one, but the man who prunes my apple trees told me that you don't prune pear trees. Is this correct?

The pears are nearly ripe now, but something is eating them, while they are still on the tree.

What can it be, a bird or an insect and how can I stop it?

We have an old pear tree, loads of pears this year. We never prune it, as it grows very slowly.
I have no idea what variety our pears are, they are very large and usually aren’t ready until October/November.
Apparently you should pick the pears just before they are fully ripe and let them ripen indoors. Maybe you should pick yours now before the insects get them.
