Maybe it was in answer to, 'Let not poor Nellie starve'. She won't with a bread pudding inside her and she wouldn't have had to look far for the citrus rind.
Its a Lancashire version of bread pudding that also includes suet and citrus rind. I have no idea why it is called Wet Nellie but I just love the name. It's also quite a tasty dish on a cold winter's day.
Blimey J ....that's a tricky one. Can remember my Mum making me Junket once when I was having one of my many bouts of tonsillitis....it was horrid....all sweet, watery and sloppy. Jam sponge and custard every time please!
