Candied fruit

I have been given a recipe for a truly delicious fruit cake. It came from my SIL who is Canadian and the list of ingredients includes candied fruit. I can't find candied fruit anywhere so can anyone advise me what I could use instead or, preferably, where I can get these fruits. The recipe is so juicy and lovely that I think using dried fruits would totally change the flavour and texture

I used to have a recipe for candying your own fruit, but I am blowed if I know where it is. If I can find it I will post it. I know it involved soaking the fruit in a sugary solution for a while each day for a week or so, and each day drying it on a rack. The pineapple was delicious, but it was rather a faff.

I adore candied fruit. But it's sooo fattening.

Waitrose do a lovely bag of dried exotic fruit (mango, pineapple etc) in larger, moister chunks that might suit. Not at all like the dried fruit of old.

I used them in a Jamie Oliver bombe type pudding at Christmas and they were wonderful.

They are in a bag on the shelves with the organic nuts and nice ingedients.

I used candied fruits for the Jamie Oliver ice cream bombe recipe. I could only find them on line and they were expensive and yes very sugary hence full of calories. If it had not been a special occasion I would not have bothered.

Last time I saw some proper ones were in Granville in France. They were the equivalent of £6 each!

My Jamie Oliver ice cream bombe recipe ended up making a large and a small bombe!

We had the large one at Christmas but the small one is sitting in the freezer - maybe for Easter?!!
