best cut of lamb for casserole

My favourite is lamb fillets, also known as tenderloin. It's a long narrow boneless tender cut.

I use boned diced lamb shoulder for stews - the butcher prepares it for me. It’s so tender after long, slow cooking.

I would buy neck or shoulder of lamb. A good butcher will dice it for you. Ours sells what he describes as stewing lamb, it makes a lovely curry.

Bone-in Shoulder is the best for every method - roast, stew, casserole , curry, mince ..

Neck fillet is very tender, cut into chunks and casseroled with lots of root vegetables.

I just ask for diced lamb, although I find mutton just as good, when it is going to be slow cooked.

Shoulder diced is a good casserole cut, if you want boneless.

Lamb fillet is also a good cut, I also mix it with say neck rings to make a delicious Irish stew.

I don't go shopping . My son passes a farm shop on his way to my place and he doesn't know about cuts or cooking.

I prefer to cook it slowly in the oven in case I forget about it. I'd rather have boneless chunks if it's possible to buy lamb like that, but I don't exactly know what to ask the butcher for.

If you're going to a small butcher, ask him/her.
