I wonder if one of you scientific ladies can explain to me in simple basic terms what over-fermentation means.
And its application in breadmaking ( I think it's used in beer making too.)
We made a batch of bread which turned out vinegary/sour, flat and hard, and someone said it could be due to over-fermentation.
